Hi Britney, this is the BEST marshmallow cream ever! It's soft enough to spread as a frosting, stays soft on ice cream, and remains creamy in the frig. By using a good vanilla, or other flavoring to it, just adds to the fun. Thank you so much for this recipe, I'll never buy store marshmallow cream again

It lasts about 3 months in the fridge. If you refrigerate it after use, the egg white is not a problem. Great question!

Marshmallows are made from corn syrup, so that is a really good question. I have a simple syrup recipe that might work that is made with granulated sugar and water, but it doesn't usually turn out as thick as corn syrup. I'll have to play around with that.
