Tryin this out, this is my second time making wine and just put in everything today, really appreciate the recipe as I had no idea that wine could use tea as an ingredient, same with the lemon +Lots of respect :) Thanks, I'll give an update on how it goes.

This video gave me alternative ideas. Boil the water and put in fruit instead of campden tablets. Tea for your tannin and a lemon for the acid blend. These are great ideas. Genius!!!

I cheated making a similar recipe- slightly heavier on the sugar and used a turbo yeast (apparently a mix of yeast, nutrient and enzymes). Been meaning to try it 'properly', but can thoroughly recommend the mixed frozen berries for wine making. I also added some black tea for some tannins, has made for a nice red wine, I fermented until dry, but whilst slightly sweeter it was nice with lemonade

I just put up two 5 gallon batches of mixed berry from this recipe and added 5 oranges, 5 clementines(peels and pulp), a cinnamon stick and 10 cloves in the boiling water for each for a spiced berry wine.

When using fresh fruit that is an excellent idea. But, I find that when using frozen fruit and the short boil, and the pectic enzyme, that by the time primary fermentation is done, there's nothing left that can be identified as the original fruit. Mashing is optional.

Mixed berries are a great idea. My first mead (started about 7 or 8 months ago) was a similar mixed berry. I tossed the berries into an oversized pot and boiled them sans water (the berries broke open an released the juice). I should have used by metal, fine mesh strainer to get the berry remnants out, leaving only the juice (not doing that caused a blow out due to the thickness of the berry pulp). I used honey to bring it up to the desired specific gravity. Looking forward to the first tasting in less than a month.

Great video. Just curious as to why one boils the berries, is it to defrost them?

Since I no longer use campden tablets to sterilize the fruit, boiling the fruit briefly to kill any unwanted wild yeast and bacteria works just as well.

Nope, Just dish soap and water, I tend to fill and soak the inside with dish soap and water overnight to help remove any residual odors. Star Sans before next use.

I’m comparing this video to the steps in your blueberry wine that you made. In this video why didn’t you add all of the fruit to a bowl of sugar and let it sit for a few hours? Also, why did you add the lemon juice and the yeast the next day? Lastly, is the original gravity taken before or after you add the yeast?

Not all wines are made the same way, all the time. It does not really matter when the lemon juice is added. Original gravity before, or very soon afterwards.

No, the use of tannins is purely optional.

I pour 8 L of white grape juice and i added the right amount of sugar and yeast and mixed them together and then i put them in a 10 L glass gallon and locked it with the bubble airlock. The bubble was present for three days stopped, and from my information, the bubble should stop after 14 or 15 days. Is there a problem or can i proceed? Thank you and best regards

You really need to take a hydrometer reading. If the hydrometer reads 0.994 or less then fermentation is complete. Else, you may have a stuck fermentation. If the white grape contained "Potassium Metabisulfite" a preservative, then it may have inhibited the growth of the yeast (or killed it off). You may have some success in restarting you fermentation by adding some additional yeast.

@@DIYFermentation I used organic white grape juice, and it does not contain preservatives. If the hydrometer reads 0.994 or less should I continue till 15 which is the known fermentation period even if i did not add more yeast or the bubbles should keep going till it approaches ths 15 day ?

@@abdullahal-hthlol9229 There is no exact period of time for fermentation. If your hydrometer reads .994 then move on to secondary fermentation.

@@DIYFermentation . The first reading after adding sugar without yeast 01/11/2020 Original Gravity (OG): 1.080 . After one week 07/11/2020 Final Gravity (FG): 0.985 Room temperature : 25c - 27c . I'm on the right Way? Should I wait another week ? . Thank you and best regards.

@@abdullahal-hthlol9229 Just based on your hydrometer reading, it appears that primary fermentation has all but finished. You should rack it into your secondary and start continue the process.

Very rarely, and even then just to try something different. Never had any problems starting fermentation.
