Dude, the recipe definitely didn’t have Parsley. You are mistaking Cilantro for Parsley. Indian cooking seldom uses parsley. Always coriander leaves/cilantro. You also missed the subtle notes Helen Mirren comments after she tastes the omelette. Those are little bit of tamarind and one or two green cardamom crushed fresh into powder in a mortar and pestle. I’ve made this omelette several times after watching the movie and it turned out fantastic. I usually dump the onions in the eggs before the pour on the skillet though . I have also tried lightly caramelized onions. Definitely try one or two green cardamoms. The tamarind is optional if you want a sour taste mixed in. Oh and also, you are using too much cream. 1 tablespoon is good. Both crease and milk will work.

Thank you for the tips here. I will try the cilantro, cardamom and tamarind. For some reason I thought shaved cheese was added at the end in the pan? This is a fabulous movie…brilliantly shot and acting is well done. This movie is France discovering omg spices from India are yummy in French food lol.

Recipe is based on French and Indian fusion. The main ingredient is the egg! In France they use parsley not corriander.... The fusion of the French omelette would be the added Indian spices, paprika and chilli, otherwise the use of corriander would make it more Italian with Indian twist... Taking a chicken egg from greece, does not make the omelette greek 😊

Sorry you needed to lightly brown the bottom. Cover the pan with a clear glass lid and let the steam cook the top. Do not keep messing with it like you did. 100% wrong. He didn’t do it in the movie and that’s because that’s how everyone does it my friend. They had the best chefs consulting so don’t mess with what they showed !! Finally I have to say I’ve tasted all possible omelets in the world and this version is light years better than any other there is just no comparison. You can also skip the salt BTW as the ingredients including egg (yoke) has just enough. And yes Cilantro not Italian parsley. Only use Cilantro.

You made the omelette wrong 1. You were supposed to use cilantro or coriander but you used parsley or no reason AT ALL😡😡😡 2. You didn’t use Indian red chilli powder 😡 3. You didn’t use Indian turmeric powder😡

The movie recipe had no turmeric. We dont know what herb they used.
