Youre usually suppose to have a cone in the centre and glue them to the cone and it adds stability. I mean you can do it without but its way harder and as you found out you need heaps more of them. Skewers/toothpicks ove also seen used to keep them secured to the cone as a double measure and also if youre not using caramel or dont want that flavour. Course chocolate is used more as the glue for that sort. Ive heard theyre very popular for parties like weddings and new years cant remember where but i know ive seen a fair few only for bog things like that because they take so much work.

A colleague of mine went to vanilla plantations in Madagascar for work and she was given a bunch of over 100 vanilla pods and she gave them to me as I knew I like to bake. I still have some stored in sugar. I had tears in my eyes when she gave them to me. Best day as an amateur baker!

The thing you said about Costa is because of two reasons: it’s a franchise so any person can create a Costa store and be supplied with the supplies to run it, also because when I worked there we were basically just told to wing the measures in the drinks (they don’t train you at all just kind of show you how to make stuff once and send you on your merry way)- for example if an order came through for an iced vanilla latte I would make a coffee shot (quite badly as I wasn’t trained) and put anywhere from three pumps of syrup to five pumps as there was so much confusion of how much to put for each drink. But if my colleague made it for you they’d probs make it completely differently! I rambled oops but you get the point aha

In Italian latte is milk and we have a hot drink called "latte macchiato" (translated it's "stained milk") and it's a glass of hot milk with a shot of espresso coffee! I Love it 😍😋 anyway, I think from that all the coffee shops started to create all these hot drinks with milk and something in it (chai latte, matcha latte, pumpkin spice latte...ecc) 😄

If you’d made a witches hat cone and then used it as a mould to put your buns around the outside it dries more stable and when the caramel dries you can slip the cone out from underneath!! Xx wow well done Grace you did a super job and Papa Booth-is one lucky guy!
