In this video I share the recipe I use for pickling beets. We had a good beet harvest this year and I've been putting up some of them in the form of pickled beets so that we can enjoy them all winter long!
Here's the link to the pickled beet recipe: blindpigandtheacorn.com/how-t...

Nothing is better than pickled beets. In PA we would put hard boiled eggs with the beets as a special treat. This was very common among the Amish and Mennonite communities in South Central PA. God Bless

I love pickled beets. When I boil them I do how Granny does with her green beans ( I bring them to a boil and simmer for a couple of minutes, drain and refill with water). Also, I think Lutz beets are a beet that has a touch of sweetness and does not taste like dirt.

As a little girl I never liked beets. For the same reason your girls didn’t, they taste like dirt smells! Lol Now I just adore them. I’ve never grown or pickled beets, but would like to. Our garden had been on the smaller side so I was selective about what I grew because I wanted to make sure I had my most favorite things. Now, my husband extended our garden so I’ll be able to try out more varieties. Beets will be one of them! Thanks so much for showing us your method!

Mostly I've only had commercially Jarred pickle beets, but they don't taste like dirt to me. Could be because they're commercially done & junk they put in there covers it up so you'll buy them. Lol.

Beans, greens, grits, and beet pickles is hands down my favorite fall to spring dinner. I use the grits in the beans as a lazy man's version of beans and cornbread. Toss in 53g of grits for each serving of beans anywhere from 10 - 45 minutes before serving depending on how much bite you want left in the finished product. Leftovers set up and make for a nice savory slice of fried mush the day after. And very little goes better on stewed greens than pickle juice.

I loved them and here is something she used to make, Beet Eggs, boil some eggs and put them in the beet juice when most of the beets were eaten, leave several days, up to a week in the frig, and the eggs would turn purple clear to the yolk, even the yolk was kind of purple and so tasty.

I just ate some pickled beets yesterday. I am the only one in my family who will eat them. My mother and dad really liked them, but I did not really eat them growing up, however, I do like beets now.Yesterday, my husband made a face while watching me eat those pickled beets from the salad bar and said he liked them roasted but not like that. I told him he didn't know what he was missing : ) tastes like dirt but they are GOOD! and I still like them too (LOL)! I do not have a canner and have never put up any food like this. I keep watching videos to try to learn how, you make it look pretty easy to do. I am looking for a canner that I can use on my glass top stove and when I find one that will work I am going to try this recipe. Thank you for the video showing how you make these.
