Pastry chef here! I used to work in a nut-free bakery, and we used ground toasted sunflower seeds to replace the almond flour. It added a really nice nutty flavour!!

In sweden it's easy. Kokostoppar (Coconut tops) is macaroons and macarons is macarons. But we eat macarons nancy more then the other type. Those are called biskvi. So much easier when all have completly diffrent names

As someone who went to culinary school and who's favourite thing to make was macarons (because we got to eat them or take them home, which was great cause they're usually so expensive): you did incredibly well for the first time!! Especially considering you didn't use almond. The step where most people usually mess up is overwhipping the egg whites and/or overstirring the complete mixture, which takes out all the air they need to rise and get the little foot. They are superduper cute Mia, so proud of you! And I hope they were delicious! 💚🐸

I was super impressed too, macarons are quite difficult to do and seeing her have such nice result in the first try and particularly using oat flour !👏🏼 she’s such an inspiration 🥰. They can be really finicky depending on your technique, humidity, ingredients, oven ect. I wanted one of those pretty towers and it came out so perfect! Just taught myself by watching KZbin and joining Facebook groups to ask questions.

So i've never made the oat version of macarons, however I make regular almond ones frequently. The fact that you did this first time is VERY impressive. A little tip, if your macarons are sticking to your parchment paper or silicone mat, they are underdone. They need a minute more in the oven. This is of course with the almond version. Not sure how the oats would change that. But I can't wait to try this version of the recipe!

Little piping tip from a professional baker! When piping things, instead of leaning over your arms to see what you're doing (which makes it almost impossible to hold the piping bag straight up and down, fhus resulting in uneven/bumpy piping) keep your elbows wide and look BETWEEN your arms. It makes the piping bag naturally perfectly upright and way easier to see what youre doing!

Love you and LOOOOOVE that you're trying new things. Don't want to be a know it all, but you should leave them in for the full 15 minutes. They won't be quite as breakable and won't have the slightly spotted look if you bake them the full time. I do mine at 285 for 15:30. They look amazing!

ADVICE FOR CLEANING PIPING BAGS- squeeze out as much as you can then put them inside out shove them into a bowl of warm soapy (degreasing soap like dawn) water, let sit, then sort of use them to scrub against each other to help break up the icing or whatever dunk in the water and then you should be able to rinse. Best of luck!
