As a Chinese Australian, this reminds me of when I was a child and I went to China for holidays and my cousin’s grandma was always so considerate, she bought me frozen pizza from Carrefour that had strange corn kernels and other weird ingredients. I thought it tasted so odd and wasn’t grateful then, but now I can truly appreciate how considerate she was by trying to make me feel at home with food I was familiar with 🥰 much love from an Aussie with a chinese roots

I love pizza. I make pizza. With passion. And purpose. I go to great pizza restaurants to enjoy a perfect slice, and to compare theirs to mine, hoping to hone my craft. My mom loves pizza. It's her favorite food. My fondest childhood memory is my mom giving me $2.50 of her hard-earned money for two slices of pizza from the corner shop as a reward for helping her carry groceries on cold winter weekend food trips. We would devour those steaming hot slices while our ears were freezing off. If someone made me a pizza the way you guys made it, i wouldn't know what to say. But i know that I would smile from ear to ear. Hug them, and thank them. I would feel like the luckiest person in the world to have tasted something so wonderful. Great video. Thank you.

I don't comment often. Miriam, that pizza looked delicious. We have a similar portable oven in the Unites States. It is called a Dutch Oven. What we do differently, is we start our fire in advance. Rather than use fire, we use coals. By starting the fire early, the coals are ready when you want to cook. Also, you can control the heat better. Good luck with your pizzeria. I would like to order a Szechuan pork belly and mushroom pizza when I arrive. You may have to plant more wheat.

The biggest dutch oven I have ever seen. Miriam, 在婆婆院子里用耐火砖和石板自己砌一个大馒头状的土窑就可以烤披萨烤馍馍烤鸡烤羊肉......可以用青海的牦牛奶自己做mozzarella cheese和butter.马爸爸家可以买到凝乳酶。 BTW, 丝路上的 馕就是披萨的 老祖宗

Helpful tips: Roll the dough into the shape on the lid. You can put corn grits under it, and slide it off onto the main cooking surface, which should be scalding hot (aka preheating with fire under it, so it cooks as soon as you slide the pizza on. You can also use some kind of newspaper as a sliding tool to help.

Hi Miriam, Watching your videos transported me back to my early childhood. I’m from former Yugoslavia and grew up in an agricultural town. Our life back in 70ties used to be exactly what you are showing us in your beautiful Chinese family. Good part of spring/summer/fall we used to cook and bake outside. Gardening, harvesting, preserving was exactly the same. Entire family used to work on family farm. Elderly were babysitting us young children until we were able to start helping. This way of life prepared us greatly for the future and disruptive changes that fell upon us. Your videos are just fantastic and wishing you and your loved ones all the best. Tell your husband, he will indeed have a great an successful business. In almost every video his dreams of his own business are obvious. I’m sure, soon we will watch your own brand flourishing!!! Most important is - keep your love alighted 💖

Actually, u can use a kiln, something that China has a lot of expertise to make. Normal Kiln is a large furnace used to dry clay products like bricks and pots. Somebody in the village can make a small kiln for pizzas. The American natives use a version of a clay kiln as oven also.

Oh yes, I often see kilns here in Yunnan, and some use them for baking. Some local friends started a rural bakery with a large outdoor kiln in the Western Hills outside Kunming and every weekend lots of people would come to see the bread being baked and buy some to take home. Sadly they had to close down because of the landlord, but they reopened downtown.

As a Chinese living in Shenzhen city, this video remind me of the wonderfully fun year I spent in Dali Yunnan. Dali is also a relatively rural area, and people are very pure and nice. It was a completely different living experience there compared to Shenzhen, I enjoyed it so much, and I miss it when I feel stressed.

That pizza was done with labor of love LoL - from sunrise to sunset - next time use wood so the charcoal will keep cooking it. Burning straw doesn't give you enough heat. I loved that pitchfork removing the oven lid part :) Good thing it didn't fall and dust up the pizza with ash.

Well done. Got a suggestion. You can either get 2 of those types of pans you were cooking your pizza in to help the next time round. Alternatively, you can hopefully have a stone built oven that you can cook your pizza and any baked goods in. A stone built oven is perfect for a rural environment too.

There is a special bread we make in my country with a similar pot. But we first make a fire with wood and create hot coal. Then we cook the bread with the hot coal below it and above it. The flavour and taste is not comparable to bread not cooked this way. I wish I could try your pizza. Next time try using the coal produced by your wood (the cooking goes much quicker).

@@MiriamFollin it is made from pearl millet. I have not been able to find it in China, but I know India also grows pearl millet. I might be able to order it from there. Oh my God, yes, I hope you will be able to taste it one day. I am enjoying Hangzhou. It is a bit more humid than I am used to, but I do like it., 😊😊

Miriam, I wanted to ask if you have access to yeast (for breadbaking) in your rural area or is there some other means by which you rise the breads? Especially, did you have yeast for the delicious-looking pizza dough? How far is it to buy products from the stores -- that don't grow in the garden, or eggs, tempeh, or such?

In northern China (Manchuria), they used to bake roll flour without yeast on iron pan without oil (low heat with lid on). Then after it's baked, pour topping like cooked meat, vegetables, etc. Crust was very crispy.

I really like your channel. If I can advise you, such an oven must first be warmed up very well, light a lot of charcoal or wood, put the pizzas in a heavily preheated oven, cover and put on already fired coal or wood. It is also important to fry things like mushrooms and spinach beforehand to get rid of as much moisture as possible

Pizza looks great!. But couple things I'd point out, from some of the recipe videos I've seen, the tomato sauce, they generally peel away the skin and then blend the tomatoes. Also, they say it is better to heat up the pan first, before putting the pizza on. So perhaps a flat round pan could be used to transfer the pizza to the Oven/Cast Iron Stove etc.. after its been heated. I'm apologize for being too fussy, but did you guys also ferment the dough for a long time, with yeast added? The dough for the pizzas I've done, were fermented for 24 hours, and it came out better when fermented.

I guess blending or not is just a personal preference, just like keeping the skin or not! But we don't have a blender here, so not really a choice for us. We did heat up the pan first, the bottom of it. I think that's in the video too 🤔😊 The fermenting was definitely not as long as you suggested, that's something we could experiment with if we make pizza again! Thanks for sharing your thoughts!

Heat the stones first add good sized wood, burn it down, take large chunks of wood embers for the top of lid. The heat of the stones and ash heat the bottom pan and the burn limbs of wood keeps the lid temp heated. Pizza looked lovely. Great job.

Another helpful tip. Really grease the bottom and sides of that pan with a good amount of oil the next time you make pizza. Your pizza will be quite crunchy then and your dough will cook better.

You could add lots of garlic, ginger and turmeric - great for health - and also makeChinese pizzas from wood ears, seaweed and all the endless Chinese spices and condiments. I think the dough needs to be fermented, then it will get softer, otherwise it’s pancakes, check it out on website, I am sure you will make the better fresh pizza!
