Have you ever made tofu from scratch? I watched the process (and tried a little myself) before, when I visited some relatives of a friend. This is my second time - I hope that I will soon master it myself!

The majority of people wouldn't have much chance to see how tofu is made from scratch, thanks for sharing. Actually this is one of the priviliages of living in rural China. Miriam, I can sense that you are quite excited about getting to know all these traditional things in China and sharing them with us viewers. Tofu goes to market at 8am right after being made, that is ultimate freshness
The same process of making Tofu many decades ago my mum did, in a small village in Fujian (福建省 - 南方)。 I helped mum grind soy bean (用石磨), saw the whole process when I was a pupil. Missing my hometown in this Christmas night.

pulp - leftover of the soybeans is named okara. And I use it in my cooking. This okara is the only reason why I prepare tofu occasionally by myself (otherwise I prefer bought tofu). Usually I make more at once and freeze it - than I use later for vegan "meatballs", cakes, or ravioli staffing, vegan pasta bolognese...

@@MiriamFollin there are plenty of recipes with okara on internet - it's worth to try. Delicious, full of fiber and nutritious. Probably it's more traditional to use it in Japanese cuisine - as the origin of the word is Japanese (just found it today)

For making tofu, coagulent (gypsum or other) is added to turn into curd which the lady did it at 1:50. For making tofu milk, screwpine (pandan) leaves are added to the boiling milk for frangance. Hot tofu milk goes well with "you tiao". For refreshing drink in the summer, chill it. My goodness I haven't my lunch when I saw you all woofing down your breakfast. I felt like taking a flight to taste "cai jia mo". I am glad to see your "lillsolen" growing up and in few days he would be one years old. Can he walk?

This lady uses gypsum as far as I understood. My husband tells me there is quite a debate about which one is ok to use or not, but I wasn't aware of that! The cai jia mo is amaing, we are not in the small town now but in Beijing, and I really reallywnt to have one right now. But my husband is cooking some lovely dinner at this very moment, so I'll probably forget all about cai jia mo in a little while haha. Yes, lillsolen is growing and glowing and walking a few steps here and there! Although nowadays he mostly goes by "lille gullgubben" haha.

You seem content with your lifestyle. Your husband is a very good man. Your son is adorable. I cannot eat noodles or spaghetti whilst at the table with anyone except my hubster and adult children as I would be too embarrassed. I’m English and therefore never learnt using chopsticks or rolling them around my fork and so I end up with a face full. If it’s spaghetti with a sauce, I’ve been known to get the sauce in my hair. Don’t ask me how, but I will end up with an orange face after a spaghetti dish 🍝 😆 And with noodles, I have never managed to eat anything with chopsticks unless I have harpooned it!

In Indonesia, we fermented the pulp of the tofu. (Just like fermented soy bean =tempe) . cover with flour (+garlic and salt). And then deep fried it.

Tofu making is so similar to making fresh cheese. I worked on a small goat farm and we would would hang the cheese curds like the tofu lady did and give the whey to pigs.

The last authentic tofu shop near my house will be pulled down as the whole area will be redeveloped. There are so many products there. Natural. Deep fried. Skin etc. I love them all. Like your video they start at 4 in the morning. Hard hard work in cramped surroundings. Real tofu makers are disappearing in Tokyo. As y-u know, many ppl misunderstand tofu. How to use it etc. it’s like a sponge for wonderful flavors. Crispy skin is so delicious.

some places in nyc sell this too. anyone living in nyc prefer tofu that doesn't come with chemicals and preservative, i highly recommend to find few sources and hit the market early.

I am crazy for tofu! I was just thinking about the best tofu maker to learn! Here it is! Timely! Video is wonderful! (Flashback to my mother’s homemade version...erase memory please. Btw...why bathroom? Lol she stopped after I caught her. Tofu took on/absorbed...) At my worst...at least three life threatening health plus serious circumstances...tofu calmed me. I ate blocks of it! Btw...his English is great! Clear. Someone who teases Western...he has the most Western look! Lol.

Two observations. One is that necessity is the mother of invention for sure in this case with the specialized contraptions for tofu making and two, that lady works so hard everyday.
Pulp of the tofu also tastes good. We use it as food when I am a child.

You're right! I thought I added an "info text" like in the beginning, since I didn't film myself saying anything about it. But she used gypsum mixed with water, which is the white liquid she adds around 1:50 . So you can see the process in the video (it slowly separates) but I didn't write it out (or rather, I didn't insert the card I wrote out, I forgot...).

That food looks tasty. I love all the colours. I must be the only vegan who hasn’t knowingly eaten tofu. I bought some once and tbh I didn’t know how to use it and had to throw it away when it went past it’s ‘use by’ date. I have never met or seen a Chinese man who seems so chilled out and happy as Miriam's husband. I love his smile, he always looks so cheeky and he is GORGEOUS, they are made for each other! 3 a.m. here in USA and I can't sleep so I am watching repeats of your videos! Shame you can't "like" them twice! I was put on a no meat diet by my cancer Dr so I have been watching you food videos. While watching the tofu video I noticed you said they throw the watery substance out? I buy soap and shampoo with soy in it, just got me thinking if you soap women could use it to make soap? Just a thought. Would also like to have your mother in laws dough recipe, mine is not stretching like hers so not sure what I am doing wrong. I also have a long way to go till my dumplings look as pretty as yours lol but I have been told they taste good! Stay warm and safe!
