That's what happens when you eat healthy for a long time. The traditional Asian diet used to be full of rice and vegetables. The switch to a lot of meats and oil and deep processed garbage is bringing their health up to par with western countries. Good for the pharmaceutical/animal agriculture industries but not for having a healthy population of strong, healthy productive people. For example in Japan heart disease, diabetes, hormonal cancers (and colorectal), hypertension, kidney disease and several more were almost non existent 70 or so years ago, but now... it's a shame.

Look at the side of his knife blade. How carefully it is sharpened. How it has been chosen and shaped. And at the way he holds it. I wish I could get one just like it. Carbon steel,not stainless. Better edge. Same shape also used as a chopper or cleaver,but thicker and heavier. A stainless cleaver is all right,but for a working edge,carbon steel may rust and require care,but the results are worth it.
