In this video I make some Spelt Croissants and give a quick review of Claire Saffitz's new cookbook "Dessert Person". This was a really fun and challenging baking recipe.

Look at them flakes for dayz! I really like this video because you showed everything! I’m a flaky pastry newbie and I get super nervous when I am making the puff thinking I am fucking it up somehow (even when the final result is good) and watching this made me realize I was beating myself up over things that happen to other people, so thank you! Great video!

these look so beautiful and delicious! just one little tip, next time you make them, when you're about to roll them into their shape, press the tip of the top of the triangle, and when you roll it, that little tale can hide above the body of the croissant and you get that beautiful striped design, if you don't do so, the fermentation process makes the tale go up. I mean, it's a very meaningless thing to point out at, but it's cool to know

this was such a nice video! i've already baked mulitple recipes from this book with the focaccia, the sour cream buns and the lemon tarte being my favourites. i've been wanting to do the croissants but i'm waiting for my uni semester to wrap up so i have enough time to try it :) i hope they turn out as good as yours!

Making Croissants today for the first time in my life :D I don't have her book, but I used her video she recently had with NYT cooking :D Watching your video to gather some experience. Wish me luck! :D Can't wait to eat mine tomorrow, looks like yours turned out great!

Hi does the spelt flour make this a ‘healthier’ croissant? I wanted to make this for my brother but he said spelt sounds bad because it’s super heathy

I personally don't think so. Spelt is more like whole-wheat flour and adds a nutty flavor to your baked goods. I think there's more nutrients in spelt flour making it healthier, but it's not bland or anything. I haven't made these croissants, but I really like it in muffins and scones.

For croissant videos, always show a clear cross sectional cut of the final product. That's the only way to reveal how successful the lamination was. Whether there's a honeycombed open crumb. It's a shame to go to all this work and not show the "money" shot. Croissants taste great even if the crumb is flawed, but it's important to show the interior crumb in a clear cut.

Beautiful croissants and very nice video however this recipe is very misleading. It calls for 3 cups of bread flour and only 1/2 cup of spelt which does not make it any healthier. It's just your regular cruissons with very small addition of spelt. I love watching Claires videos and I think she is a very good baker but many recipes are misleading. For those who is dealing with health issues or just trying to stay away from refined products this does not work at all.
