Was Craving some swahili street food so we decided to make them at home. We started out with cassava with salsa (Mhogo na kachumbari) and then followed by Vitumbua for brunch. Lastly we made the original zanzibar mix (Urojo),
We had a feast for sure and satisfied all our cravings.You will also find some tips and recipees along the vlog if you are also away from home and missing some swahili food.
Ingredients for the vitumbua (Rice cakes)
Blend all the below ingredients in a blender
- 3 cups of rice (Soak overnight)
- 1 cup sugar
- 2 eggs
- 2 table spoon powdered milk (Optional)
- 2 cups coconut milk
- 1 cup water
- 11gms packet of instant yeast
- Cardamom seeds 10pcs for fragrance
Allow mixture to sit for 30mins so the yeast works its way in and then fry in a large sized tapoyaki pan with cooking oil
For the zanzibar mix, it includes (The rojo/yellow soup, Bajia, Kachori, cassava crisps, beef skewers, chutney and ukwaju) you can search for how to make each of these individually. I will try to do a video on how to prepare this step by step
Ingredients for bajia
- blackeyed peas soaked overnight (2 cups)
- 1 to 2 tablespoon of Garlic (Depends on how much you want and how thick is ur garlic paste)
- Salt to taste
- 1 chopped onion
- 5 chilis
Blend these in a food processor and deep fry in ball sizes
Ingredients for Kachori (potatoe balls)
- mashed plan potatoe
- Chili powder
- Salt
- Lime juice
- chopped Corriender
mash all these in a ball and deep fry with a thick flour& water paste
The cassava crisps were grated and rinsed and left out to dry for a few hours before deep frying, this helps them from sticking to eachother
The beef skewers were marinated with spices and yogurt to soften them up, and then just pan-fried with water and a little oil until all water has dried completely.
Chutney is a blend of Coconut flakes with onion, chili, lime and salt
Ukwaju is boiled Tamarind with carrots, salt and chillis and then blended together
The Rojo/yellow soup is made from water, a little flour depending on how thick you want it, some tumeric, lime, salt and garlic. just boiled for about 5-10 mins

Can you show how you try .the muhogo chips. I've done bfr it bcs oily and hard But I make all the food. Only crisp is difficult Thanks for reminding us our original Menu

Trying the muhogo Crisp please I would like to see And yummy The Vitumbuas. haven't made fir V Long. I have V nice pans. Am fasting do real wish I had them . My fmy don't like much the Urojo. but to make for guests is a luxury And the mshiksku also so.tempying. I make me feel the real need to eat

Well I grate the cassava and then rinse it so that starch is removed like how u would rinse ur rice. Then I let t dry outside a little then just deep fry with oil and seperate them when u are inserting them in the oil
