Look, I'm actually a fan of Chipotle, but it's high time to do it to em as we say. I'm talking homemade tortillas, beautifully marinated chicken, and perfect rice. Once everything is said and done, you're left with quite possibly one of the best burritos you'll ever eat.

The biggest lesson I learned here was do *not* use pre-ground cumin. Buy cumin seeds, lightly toast on the skillet, then blend yourself (just like he shows in the video). It's like cumin x100, WAY more flavorful.

I used to manage a Chipotle, so I was curious about this video. Back when I was there, we legit did make everything ourselves. I'd show up at 6am to start prep work. Make all the salsas, mash avocados and make guacamole, chop all the veggies by hand, even shredded all the cheese ourselves, and cut fresh limes for juice to squeeze onto the chips. By the time I left, the former CEO of Taco Bell had taken the reins of the company, and just as I suspected it would, things started getting more artificial. We would no longer even marinate our own meat, it would come in a bag, pre-marinated, and the quality of the meat was noticeably worse and the seasoning was much weaker. Started getting pre-chopped veggies, except for the peppers. Who knows how it is now. Used to have pride in my work, then it just started feeling like fast food.

My favorite way to get the max taste from grilled/seared chicken is doing it the way you do. Sear it, get the char, then finish cooking in oven Or the slow cooker. I'm gonna try that marinade!! Yeah, we're about to partake of the annual greatest butter holiday in the US. Thanksgiving dinner around my house will typically consume 4-5 *pounds* of butter by the time all the recipes are hit (service for 8, btw) The turkey alone (usually 16lbs) has a full pound of compound butter slathered both under and outside-of the skin on the entire bird. Add to that mashed potatoes, lefse (it's a Norwegian thing; try it!). gravy (a half pound just for the roux), pies, stuffing, homemade butter rolls. The list goes on and on, an nearly everything requires butter in some fashion.

This takes me back. About 7 years ago, we opened an Austin Grill franchise that lasted a couple years. Essentially the same concept as Chipotle that was starting to gain grounds here in Toronto Canada. The rice we did was a "mexican tomato rice", pico de gallo freshly made daily, guac, sauted peppers and onions, black beans were seperate, but the chicken is I swear made the exact same way. Did well initially but people kept demanding for basic burgers, fries, and poutine because that's what it was previously in that spot. Couple years later and we put a Smokes Poutinerie, that only lasted 2 years too.
