We decided to try our hand at making paneer at home. And what we thought would be an easy task turned out to be a little bit harder than we thought. Eventually we got it worked out after locking in a few variables - we discovered fresh milk works better, lemon juice makes for a softer paneer than vinegar does, getting the lemon juice out is important and draining and ensuring all the water has been removed is also important.
Definitely one that is more time consuming but in the end rewarding!
Ingredients
For making paneer
2lt full cream fresh milk (to make ~300g paneer)
Juice from 2 lemons ~ 1/4 cup juice
Dilute lemon juice with 1/4 cup water
A generous pinch of salt
For chutney
300g home made paneer
5 med round tomatoes, grated
1 small onion, grated
handful of curry leaves
5 cloves of garlic
2 green chillies
1/2 cup oil
2 tbs tomato puree
1 cup frozen peas
1 tbs mixed masala
1/2 tsp hurdee (tumeric) powder
1/2 tsp mustard seeds
1 tsp rough salt
Dhania and spring onion to garnish
