So, I have a home bakery making decorating sugar cookies, etc. If you want your cookies (“crackers” lol), to stay perfectly square when baked: freeze the dough after you cut them and score them. When they’re SOLID (not frozen, just really solid. 5-10 min in the freezer), THEN put them directly in the oven. It’ll keep them from spreading. Same for cut out cookies. That’s my biggest “pro” tip for anything like this.

We make homemade marshmallows weekly. Guilt free, at least in my house, I'm happy to have them as treats. Ingredients: water, honey, gelatin, whatever flavor extract we choose, arrowroot for the coating to be non-stick. We do fancy them up in many ways sometimes too. They are very soft. One tip to be able to roast them for smores, leave them to get "stale" sitting open for a few days up to a week. Then they don't fall off the roasting sticks and toast perfectly. Hope that helps.

I make homemade marshmallows every year around Christmas! I've not made them with honey, but I HAVE made them with maple! I used maple sugar instead of white sugar and then used maple extract instead of vanilla. Follow the recipe the same as regular white sugar, but I don't use parchment, I spray/grease the pan and then sprinkle it HEAVILY with a 50/50 mix of powdered sugar and corn starch. If you don't use enough, you're right, they can get gummy. The cornstarch keeps the powdered sugar from being TOOOO sweet. Then you don't get wrinkles in your marshmallows from the creases in the paper 😉 You can also use a jelly roll pan to pour your marshmallow mixture into, coaxing it into the corners with a greased spatula and cut them really small for mini marshmallows! THEN you can put some in your freeze dryer, and get freeze dried marshmallows like some of the commercial cereals! My family's favorite "flavoring" for marshmallows is honey whiskey ❤❤

I have made those crackers for over 40 years as it was my husband's favorite , he liked to put peanut butter on his. I also baked some a bit longer to make teething biscuit's for our little ones. Your marshmallows are beautifully done .

Hey Becky! Amazing as always!! Just a suggestion, I find the a full chocolate square is too much for me so I started coating the inside of my graham crackers with chocolate and using those for s’mores. The marshmallow then totally melts the chocolate since the layer is thinner and I think it balances out the sweetness of the marshmallow better. Love your videos!!

I'm a perfectly browned marshmallow gal, but I also like making them in the microwave when I can't access a bonfire. I stack the bottom cracker, chocolate, & marshmallow on a plate & microwave them until the marshmallow doubles in size (~10-15 seconds). It shrinks down to almost normal when you pull it out, then top it with the other half of the cracker. You miss out on the toasted flavor, but you get melty chocolate, so it's a tradeoff I'm willing to accept! YUM!!! P.S. Love the hair at the end! You look lovely either way, but you rock the down do well!

I have made graham crackers before, too. I used graham flour for mine. One hint was to only lightly score them and then cut them completely while they are still warm from the oven. This resulted in straighter, more standard shaped crackers. Although I can't think why that actually matters. Love the hair!!

We make homemade smores on the gas stove all the time. I found either chop sticks or bamboo skewers work great for toasting the marshmallows. I’m a cook it golden brown so it’s gooey in the middle then burn the outside. 😊
