You guys are amazing! I have a micro dairy in AZ, I work it by myself and it is overwhelming most of the time. I hope to have a gorgeous cheese room like yours and some help someday.

This was very informative. I feel like i can do this. Starting a sheep dairy farm to make cheese and other goodies. While i dread the cost, i feel i'll agree that work makes it worth it all. Do you have any recommended reading?

Great job.I own a small flock of sheep,once I tried to make cheese from their milk , but it totally failed.I think you should not waste whey ,it is very useful and contains a good amount of protein. Thanks for sharing.

+MegaMusicNotes When you get 20+ gallons a day, you run out of room to store it, and things to do with it. It's also very perishable. Dehydrating takes very expensive equipment so that's not an option for most.

Ricotta. You can literally make ricotta and use all of it

@@MegaMusicNotes if you heat it up you'll get a full yield of ricotta, like a lot of it. It's really good and has less fat and more protein than cheese
