*THANKS FLO!!* I've just made laksa again using the paste you recommended - which is easily available here in Woolworths - one of our 2 most dominant grocery retailers! That paste is better than many others I've tried. I had tofu puffs in the freezer, some leftover fish, a bit of leftover chicken and WOW - easy, cheap, used up leftover bits - and just D E L I C I O U S ! Quick story - my (Slovenian born) parents used to stay with us here in Sydney to escape the winter months in Toronto and spend time with their only grandchild. On one trip they unexpectedly had a delay in Singapore and were given a meal voucher. Dad LOVED soup and so they blindly ordered a bowl of soupy noodles which they shared and Dad kept raving about it, he had NO IDEA what it was. One night, I decided to make laksa for us all, and the look on his face with the first taste was worth millions - they'd had LAKSA at the airport! Dad was so happy and it's a lovely memory as he passed away 6 years ago at 90. Mum will turn 97 next month. I have been blessed to have them in our lives for so many years, even if the distance has made things hard at times. Cheers and a hug from Oz!!

Sous vide them at 194°F for 8 mins. Perfect medium eggs with fudgey yolks every time!

They are usually in the refrigerated section at the Asian market with all the other tofu.

Yes, it’s spicy which is why I scooped out some of the chili oil.

There are other brands that you could try. Perhaps ask for it the next time you go to the Asian market. They might have it.

The only Malaysian paste that I could find here is "pes Kari Ayam" I bought it but I don't know what it tastes like, and how far it is from laksa paste. I also bought the same tofu as I your soup, And also Malaysian eggs, because everyone knows that the hens in Malaysia lay square eggs 😂😂😂😂

Kari Ayam is a good start. It’s not laksa but will still be super flavourful. Kari Ayam is literally curry chicken in Malay. Enjoy!
