I made the chicken only, served over white rice plus steam broccoli. Substituted shallots with yellow onion using what was on hand. Grated garlic, ginger, onion instead of pestle (didn't have) and stuffed them in chicken. Added your sauce recipe and let the chicken marinate over night. Cooked in the oven today. It turned out super tasty! Thanks for the video!

The mortar is the bowl. The original firearm was a very similar bowl. The pestle, from an Italian word meaning "to pound" -- "pesto" is a "pounded" sauce.

Just now made this tonight and it was delicious. I always haver Ketjap Manis in the pantry because my mom used it with her Indonesian Saute's. I can't find it anywhere local so I order through Amazon. I didn't have crispy shallot so I used crispy garlic (commercial) and it was really good. I will make this again.

You should tried the real version of Malaysian chicken rice recipe with fried soy sauce marinated chicken, chilli sauce & thick soy sauce together with chicken soup. That's what we always eat here in Malaysia. Never eat your version before but your scallion paste looks good too. Will try it TQ ❤

Mortar is the bowl part and pestle (silent T) is the beater/stick shaped part.... mortar comes from the latin word mortarium - a place for pounding and pestle comes from latin pistillum which means pounder...and now you know... (grin) Thx for all the lovely recipes... from a local to Vancouver atheist.... ;^)

Hey Flo and Dude. Do you remember watching Danny Kaye in the movie “A Connecticut Yankee in King Arthur’s Court”? There is a couple of lines from that movie that I remember that the “pellet with the poison is in the vessel with the pestle. The chalice from the palace has the brew that is true.” Any hoo, The mortar is the bowl and the pestle should be pronounced with a silent ‘T’, so it rhymes with “vessel”.

Love hainanese chicken so will definitely try this recipe. It’s amazing to me how the Chinese have influenced the cuisine of many countries. BTW, the “t” is “pestle” isn’t pronounced like in “castle”.

If your just using a normal cup do you still use equal party rice and chicken broth and do you remove all the strach off the rice before you cook it

Stainless steel destroys the enzymes from the condiments, the mortar & pestle method preserves it, for those who care about those. My mom used to joke your sweat when it falls to the mortar improves the flavor, lol...

I have tried the receipt but the drumstick part not cook at all 😅. I followed the cooking times doesn't work for me using also Philips airfryer. .
