I have worked at Sarku and the teriyaki sauce in a bag. To make fried rice you gotta ratio out the rice. Of course you need to add water, add soybean oil, soy sauce then add the frozen peas and carrots. Let it cook in the rice cooker.

Cody, I know you said you didn't have chicken thighs and in the end said, "Yeah, there's is better." Here's how you make it better. Use chicken thighs (I know you said you didn't have it), but you need FATTY chicken for this dish. The other critical step you missed is a stand mixer with a dough hook. The chicken has to be MIXED to striate and separate out the fat for 30 minutes on low speed. Then once it's pan fried you will get the immense velvety airy softness that you get from Sarku. That is their secret. Yes, the sauce may need adjustment, but even if the sauce is a touch off, the texture of the chicken can make up for it.

here is how i do it. i go order a chicken teriyaki from sarku then I requested for triple or quadruple meat portions. Then I would split all the meat into several meal portions. I just cook the rice and steam some veggie then add a portion of chicken meat to it. This way I know I am getting the authentic taste.. Save alot of money. The amount of meat im getting would last 5 extra meals.

before watching this I already had my sauce into perfection. I didn't use a teriyaki sauce because I was making a teriyaki sauce from scratch and I used regular kikoman soy sauce, it was salty but just add more water and it will taste low sodium. I also used regular white sugar. my chicken however didn't taste good. so what helped me here is marinating the chicken 😅 the first batch was okay, but after putting the second batch into my wok with burned sauce in it that what made my chicken taste like sarku.

I came here because I just made a chicken teriyaki following someone else's very popular recipe on KZbin and was very disappointed with how lackluster it was.. made me miss eating Sarku Japan's and so of course I found this video after... chumbaroo Well shit! Now I’ll be eagerly awaiting your results hoping this is a closer recreation. For best results, instead of using chicken broth, make your own stock from leftover bits of vegetables and ginger, garlic, etc. you got lying around. Beef scraps seared at the bottom are a great starter as well. Sarku apparently has a secret stock using all their kitchen scraps including beef bits so depending how deep you wanna go down this rabbit hole you can play a lot. That being said, the chicken stock is great. The fuck ups will just make future versions better. You got this homie!

Anyway, I'm curious now to learn more about this stand mixer with dough hook trick. I have those so I'd like to try it but they didn't say if you just put in cut up chicken thighs or if you add anything in while mixing with the doughhook, etc.

I did. Used the regular teryaki sauce, not the low sodium (as I misread the instructions) and it came out exactly as if I was to go to a restaurant. You’ve saved me a lot of money. Thank you much and you’ve earned a subscriber!

I liked this video, mostly for the delivery. The chicken however, did not taste like Sarku. It was very good, and the best I have tried, but I can’t understand what it is that makes Sarku so outstandingly good. I’ve tried 4 slightly different “copycat” recipes and not one of them have captured the correct taste.

Thank you! From what i’ve read and heard since making the video, they use vedge and beef scraps to make a slow cooked broth that is likely the x factor in making theirs extra savory and awesome. I agree, there is something difficult to explain that sets it off. I love that place so much.

I’m having trouble following your measurements. Is it all eyeball? How much is a glug of something? I was hoping to find a more definite measurement, because I would add too much or something I think.

Hi Jason! All eyeball. Sorry to send you on a treasure hunt, but I guessed somewhere in the comments the amounts if youd like to look. A glug id consider a tablespoon. Dont doubt yourself! Add your best guess of as much as I show and adjust to your preference. Develop that palette king!!! You got this.

Thanks Cody! I already went to the store and I have the chicken marinating right now. Sarku is one of my favorite places and we actually have one in the mall near us. I’ve always wanted to try cooking it myself but I always ended up like you did in the first part of the video. It just wasn’t right, but when you tried again and thought you got it right this time, I was excited to try it. I’ll let you know how it turns out!

Hey hey! Sorry for the non numeric style here. I love to taste and adjust as I move along, and think its important for felow cooks to do the same to adjust for their own palette. SoundsOfJustInC hello my friend! “Parilla oil” seems to be the closest alternative, with walnut oil in second - but I am sure you would be fine using canola or vegetable. They would just be missing that nutty flavor sesame brings to the table. Maybe add a teaspoon of peanut butter to get a lil sumpin sumpin?!? Wishing you well!

@@PoeLemic I’m super late to the party here, Poe, but Mirin is a rice wine that is a sweetened sake. Homemade teriyaki sauce is made with equal amounts of soy sauce, mirin and honey or sugar. In my opinion, it’s delicious. Much better than store bought teriyaki sauce. You can usually find Mirin in a regular grocery store. A popular brand of Mirin is Sushi Chef. I hope this helps. Enjoy!

Tough to replicate, and a lot of that secret flavor comes down to the broth and also editing as youre making it and tasting. If you get a bone broth or better yet make your own you’ll have a much better result.

I understand, but I believe that everyone will be better cooks long term by adding sample amounts and then adjusting proportions to fit their palette and unique tastes. My perfectly salty is likely too salty for most. My perfectly spicy the same. I hope others will be able to construct their own unique delicious version of the dish.

Can you give actual measurements for the sauce? "A glug" and "add some" aren't very good.

You can sub glug with 2-3tbsp and less healthy glug with 2-3tsp. Take a half cup of cold water and whisk with 1tbsp of cornstarch. If you feel you need more for your serving portions, up the quantities while maintaining the same ratio. If I were to guess, I probably put 1tbsp sesame oil, a quarter sized nub of chopped ginger, 2-3 cloves of chopped garlic, and 2tsp of rice wine. Sorry for my non-numeric cooking! I believe one of the most important parts of growing as a cook is tasting, seeing what it needs, adjusting according to your own palette. If the sauce tastes too sweet, add a little more of the savory components like garlic or teriyaki. If it tastes too salty or savory add some of the sweet components, or add a little more water/cornstarch to take away some of the flavor and thicken the sauce. If it tastes flat add some more vinegar for that sour bite. Hope this helps! All my best.

Kevin Duong hey kevin! Sorry about that. Im really bad with numbers and measurements and tend to cook impulsively and taste as I go. You could likely follow the ratios of my pours along with your gut here and get a very similar result. Ill try to be better with this moving forward. Wishing you all the best!

@@codytriesstuff Yes, it's frustrating if you really wnat people to duplicate your recipe. What I'd do, is cook it until you get the flavor exact, record it, and just type your recipe. Not being an ass; please, understand -- I might sound it. Just for "normal" people like me who are Noobs at cooking, it helps to have a baseline, because I don't know what tastes right until it is made. I don't have the cooking background like you do. So, it'd be nice to have nearly close measurements (which aren't hard to do), then give those to us.
