Can you post a link to the jerk seasoning used? I have used the walkerswood wet rub/paste before and it’s very good. I’ve never seen a gallon-sized tub of it though!

Papa Joe did you add any salt at all or did you only use the jerk seasoning? Also did you use the dry seasoning on the chicken?

Millenial... The Walkers wet jerk is low salt but flavorful but low to no salt, my salt comes from the dry Grace Jerk seasoning. I used them both on chicken.

1 cup vinegar (any vinegar) 2 onions, sliced 2 scotch bonnet or 3 habanero peppers sliced thin Bring the vinegar to a boil and then pour the vinegar over the ingredients you can add things like carrots and pimento seeds to make it more authentic.
