Great question and I'm disappointed I failed to mention that in the video Sally. That strip prevents the leg/thigh from sliding down and backwards and flattening the bird. Gives you a more plump look. Thanks for watching.

I like to cook a plump half, so I push the qtr up onto the breast. The qtr wants to slide back down and flatten out so the little strip prevents that from happening.
