Here's a trick that you might want to try when you're cutting out the individual diamonds. Cover your entire piece of fondant with plastic wrap and then make your cuts with the backside of the knife. That way all the edges of your diamonds should be beveled. Love your vids!

I am a huge fan of using one of those thin, clear, flexible plastic rulers as a guide when it comes to connecting spots that I missed, because I am terrible at freehanding the "as straight as possible" part of things. :(
