will the numbers in the table correspond to callout tags automatically when you add a callout to the parts?

You could add a call out attribute to the blocks and then a call out column to the BOM table, this will provide matching call outs. If you want this to be automated you need to look at specialist software, depending on your discipline, such as AutoCAD Electrical or AutoCAD Plant 3D.

Make attribute visible and moveable and you will get what you need. Another option - is add some dynamic to attribute
