Ainz being broke is a plot hole. Presumably, they control the valuable mines from that one super rich noble from the kingdom and they should also be profiting from the mines the 8 Fingers controlled/had undead working. How is Ainz still just as worried about money as he was when Momon first became an adventurer?

Well most of the profit they gained from those were probably miniscule because of how they were conquered and probably demoralized workers from circulating more money. Also Ainz doesn't wanna flat out steal gold from the people he is governing over(since it'll ruin his image) though it would be different if he pilliged an enemy. Since the organizations they took over are just recently being governed they are unlikely to be recieving money on their end as they will need to spend those on repairs and large scale reformations they intent on doing so no, they are unlikely to recieve any goods from those area and if they are then its most likely will be used or not very significant. Also they might be intending on using the gold in the new world as sacrificial value for summoning and using items like how ainz needed to a ton of gold to ressurect Shalltear most likely some other items needs this requirement too. Though we don't know the details if it'll work on new world or just yggdrasil though I believe it will work since it doesn't specify a currency.
