What do you do for patients whose tongue is constantly getting in the way for lower molar

Just retract it well...you can take the help of the assistant. What I've noticed is that the patient tongue has to be completely relaxed...it becomes easier to retract then with a mouth mirror. There are tongue retractors with mouth props...but never used those...so cant comment on it..

You can use the same technique for either PFM or Zirconia. PFM may require slightly more reduction overall
