WOW you did an awesome job but I will tell you the shortcut that I used -- 😃😅 Put the mangoes in the chopper or food processor and you are good to go, then I pour in the spice mixture, do not squeeze BUT it takes longer to cook the juice down. During the process I add white vinegar. Adding mustard oil like you did will keep it for years. I made and never put in the fridge and it never spoils because I let it cook all the juice out and in the end process it is fried out. I do not know if I explain properly. @Nia-1a hey Nia, I really could have put the mangoes in the bigger food processor but I was too lazy to wash it. I try to avoid using too many utensils. But you definitely are onto something. I also only add vinegar if the mangoes aren't sour enough and you're right about the mustard oil it preserves the achar, but refrigerator keeps it fresh in my opinion. all condiments, I check the difference and the change in color with condiments that are left outside vs ones that are refrigerated.
