My mother (West Indian from Panama) would do something similar to keep in the fridge and use throughout the week. Her sofrito made the food sweet sweet. This right here is next level. I’m definitely going to try this. Thank you for sharing.

Hello Sis Adjeley Love your work, just wanted to say Ginger grows under the soil so it’s nutrients are right under the skin. It’s best to give it a clean was two to three times and use it with the skin. If you take off the skin, you’ve lost lost of nutrients .

I have to make this !! We LOVE these flavors but are new to this ethnic cuisine.. altho I have been watching your channel for a long time.. I live in a smaller city that does not sell things like cow foot or tripe WHICH WE DO LOVE but have never cooked together in this type of cuisine... but so excited to try .. you make everything look so delishious 😋👌... soo thankful you share what you know... 💝

Any where that processes conventional meats will have it. Try a local butcher or slaughter house as opposed to a grocery store. If that doesn't work going to the closest city and look for an Asian or Hispanic grocers Don't know if you're in the U.S. or not but cuts like tripe or cow foot commonly used in ethnic cuisines aren't consumed by the public because of the culture.. so they'll go for cheap because they're considered parts that are thrown away or processed for other things like gelatin. What's good is you can get it in abundance.. you just have to know where to look for it. Hope this helps
