Mango & Chilli Chicken on the BBQ

This was really nice and worth a go, recipe is in the video, if you haven’t got a BBQ then you can do this as a cook in the bag.

Looked lovely and tasty..and yes the best way to spatchcock a chicken is with a pair of scissors ✂️,so make the most of the nice weather with your barbecue before you have to buy a new next year if left outside because it will become rusty before Christmas 😅 👍

Hi Andy,as a pastry chef I have sliced up thousands of mangoes for tarts,so a few tips,after peeling,cut a small bit off the flatter bottom end,now stand the mango up,then starting at the top feel for the top of the pit,start to slide your knife down the pit,and angle your knife as the pit gets a more round shape,then angle your knife back in as the pit gets thinner,one side off,and you should a perfect half,then same on the other side.Most mangoes have a realitivly flat pit.I think it would work better to blend the mango with the spices,much easier to spread it over the chicken.Its mango season here,and Mexican mangoes are very good,my friend dropped off a box of 9 last week from the Indian supermarket,they were delicious 🥭🥭😊

Glad my tip helped out, Andy. The parchment paper or grease proof paper if you prefer, doesn't or shouldn't impede the cooking process. It help to hold in the moisture, as well. Many more BBQ's to enjoy for you and your lovely wife.

BBQ Tip, the smaller box on the BBQ is meant for the coals, build a fire in there put the chicken on the other side, to get a smoked chicken add a Oak chunk or two to the fire, great when putting rubs on the chicken.

Hi yeah I have done that before with a lump of pork, and beef, got some cherry wood smoking chips, it works pretty well but you need to smoke it for a good 8-10 hours, thinking of doing a rack of ribs on it at some point 👍

@@fatandy Smoking chips burn far too fast you need chunks of wood, a chicken will only take 1 to 2 hours depending on temp.

Fat Andy next time use mango pulp in the marinade rather than the fruit. Then you can reduce the marinade into a spicy mango dipping sauce for the chicken. I would recommend brining your spatchcocked chicken overnight before BBQ, you will get a juicy and moist bird and we all like that Fat Andy after 15 pints of scrumpy jack, a BBQ chook and a few devilled eggs with pickled wallys for good measure 😂😂😂😂🎉. Disappointed no belly shots this time, still " crocking and blarin , its only a bishy i guess" 😂😂😂😂🎉. Don't forget ice in the cider 😅
