Every now and then, I like to add a classic café style cake to my library of tutorials. Today I am going to sandwich a Mango Cream Pavlova cake and finish it off with a little twist. My aim is to show you that even a simple store-bought Meringue base can turn to a delicious mouth watering Gateau with just a few additions. Pavlova has a soft texture that includes a baked meringue with a little crust finished with cream and fruits. I love it but I also love my moist mud cake. So for this tutorial, I want to marry these two and create a layered cake which can be cut to present a great looking slice instead of a spooned dessert on a plate.

This is lovely! I usually make my own pavlova with passionfruit and banana, the same as my mother made. I will buy a pavlova and try this while mangoes are in season. Thank you so much.

Do you always use tempered chocolate or only when you mention it's tempered? :) I'm a little scared of using non tempered chocolate for decorations, borders etc, but on the other hand I have not yet totally mastered the tempering technique.

Compound chocolate 40 degrees is the best. Little warmer than body temp.

Hi, if i want to substitute the egg white powder to fresh white egg how can i calculated i hear that : for 4 teaspoons of egg white powder, use 2 egg whites and reduce overall liquid by 4 tablespoons (1/4 cup).?? but in your but in your recipe there's no liquid behalf the vinegar what i must do ? thanks
