You missed the Fort Santiago inside the intramuros.. u can find there the dungeons of Americans and Filipinos during world war, also Old Cannons everywhere, ammunitions, Old buildings where rizal was held prisoner during Spanish era and the oldest Tree in Manila etc.

I see you guys were at SM Mall of Asia at the start of the video, that is the 4th largest mall in the world and definitely worth to check out because the Philippines is also heavily known for it's "mall culture". malls in the Philippines are an all around hangout area complete with absolutely anything you'd need for entertainment and shopping and is an big culture shock for foreign tourists

The sand that you see is to fill the shore and expand that particular area and build Casino's Almost similar to what The Palm in Dubai. However, I heard that it's on pause due to some people protesting due to the possibility of flood during the storm.

It's part of Manila Bay rehabilitation and that white sand is for land reclamation for future building projects. Dolomite which is carbonate minerals is what they used for beach sand. The Philippines is on a clean up and building spree. From beaches to roads to skyscrapers, subway and a new Manila airport that will handle 200 million passengers per year. It's part of their Build, Build, Build initiative.

OMG I feel you on how sour those green mangoes are! Green mangoes are usually paired with shrimp paste (salty, sweet, spicy mixture) to bland the sourness of the mangoes and add some exotic flavors. Probably it was a language miscommunication with the vendor like he asked if you want just salt or the paste. Enjoy your travel!
