Should I create military only when I need it or can I have it available all the time? Does it reduce the amount of available workers?

Militias do indeed reduce the number of workers (I'll post a short video about this later this week) since they are made up of local townsfolk. I usually raise the militia only when I need them because it can be done quickly. For a more permanent defense force, I prefer to invest in retinues (knights). Hope this helps!

Would you say the gameplay of this game is similar to Stronghold Crusader in a way? I love that game but if this is a more complex version of that then I want all of it.

I couldn't say, since I unfortunately haven't played that game, but in any case I would definitely recommend Manor Lords :)
