Resep Chicken Mushroom Pie (Untuk 9-10 porsi)
Bahan:
puff pastry
Bahan marinasi:
1 pasang dada ayam @450gr
1 sdm minyak
2 sdt mustard
1 sdm jus lemon
1 sdt bubuk paprika
3 sdm tepung terigu protein sedang
1 sdt garam
½ sdm gula
¼ sdt lada hitam
Bahan saus mushroom:
450 gr jamur (shitake, champignon, portobello, dan shimeji cokelat)
7 siung bawang putih
10 siung bawang merah
3 sdm mentega
150 ml krim
1 sdm kecap inggris
250 ml air
2 sdt kaldu ayam bubuk
¼ sdt merica
Thyme secukupnya
Minyak untuk menumis
Langkah:
1. Keringkan ayam dengan tisu kemudian potong kotak-kotak, pindahkan ke dalam mangkuk
2. Marinasi ayam dengan jus lemon, mustard, bubuk paprika, garam, gula, lada hitam, tepung terigu, dan minyak, aduk rata lalu tutup dengan cling wrap, diamkan minimal 1 jam
3. Potong jamur lalu cincang bawang putih dan bawang merah, sisihkan
4. Panaskan sedikit minyak, tumis jamur hingga matang, sisihkan
5. Di wajan yang sama, masukkan ayam, mentega, bawang putih, dan bawang merah, aduk rata
6. Masukkan jamur, kecap inggris, cream, air, kaldu ayam bubuk, merica, dan thyme, aduk rata, diamkan hingga dingin
7. Taburkan sedikit tepung terigu di atas puff pastry, potong menjadi lingkaran diameter 28 cm untuk dasar lalu oles dengan egg wash
8. Potong memanjang puff pastry, bentuk jaring dengan cutter roller lalu simpan di atas puff pastry berbentuk lingkaran
9. Untuk pinggiran loyang, bentuk kecil memanjang lalu rekatkan sambil di tekan, oles dengan egg wash
10. Tutup pai dengan puff pastry lalu oles dengan egg wash
11. Panggang di suhu 200 derajat selama 20 menit

Chicken Mushroom Pie Recipe (yield 9-10 servings)
Ingredients:
Puff pastry
Marinating ingredients:
1 pair chicken breast fillet @450g
1 tbsp oil
2 tsp mustard
1 tbsp lemon juice
1 tsp paprika powder
3 tbsp all-purpose flour
1 tsp salt
½ tbsp sugar
¼ tsp black pepper
Mushroom Sauce ingredients:
450 g mushroom (Shiitake, Champignon, Portobello, and Brown Shimeji)
7 clove garlic
10 pc shallot
3 tbsp butter
150 ml cream
1 tbsp Worcestershire sauce
250 ml water
2 tsp chicken powder
¼ tsp pepper
Thyme, as needed
Oil for sautéing
Steps:
1. Pat the chicken dry with a paper towel. Dice and place it in a bowl.
2. Marinate the chicken with lemon juice, mustard, paprika powder, salt, sugar, black pepper, flour, and oil. Stir well and cover with plastic wrap. Marinate for at least 1 hour.
3. Chop the mushroom. Mince the garlic and shallots. Set aside.
4. Heat some oil. Sauté the mushroom until cooked. Set aside.
5. In the same pan, add the chicken, butter, garlic, and shallots. Stir well.
6. Add the mushroom, Worcestershire sauce, cream, water, chicken powder, pepper, and thyme. Stir well and let cool.
7. Dust the puff pastry with flour. Cut into a circle, 28-cm in diameter, for the base. Brush with the egg wash.
8. Cut the puff pastry lengthwise. Make a lattice pattern with a roller cutter and paste on top of the circular puff pastry.
9. For the edges of the pan, cut the puff pastry into bands. Push it onto the pan so it sticks well, then brush it with the egg wash.
10. Cover the pie with the puff pastry, then brush it with the egg wash.
11. Bake it at 200°C for 20 minutes.
12. Chicken Mushroom Pie is ready to serve.
