You don't necessarily have to brine the turkey, but we always suggest it for a juicer bird! 🦃

@@detrw97 Easy, simple, less messy way is to dry brine. Rinse turkey off and coat with Sea Salt or Kosher Salt. Wrap in plastic wrap and sit in the fridge overnight. Wash turkey completely before applying the rub, etc. I've used this method 4 times now and have not been disappointed. YMMV...

I would set it on 200 for the first hour to get a good smoke, then crank the heat up.

To each their own! Chef Greg went for less smoky flavor on this bird and it was delicious. 🤤 More smoke couldn't hurt, of course! 🤘🔥

my thoughts exactly. Other recipes I've seen have it at 275 for 3 hours.
