Each week on Great British Menu two chefs from a culinary region go head to head, trying to secure a place for their recipes on the Great British Menu. Sourcing the best ingredients from their local area, our chefs each create a starter, a fish course, a meat course and a dessert that they feel epitomises all that's best about their beloved region. At the end of each week the two chefs representing the featured region present their dishes to an expert judging panel who decide which chef's menu goes forward to the national final.

Marcus is definitely very stubborn and confident about his dishes and thats why he didnt change anything even after those critics have given some awful criticism about his fish and meat dishes.....

Actually, chefs like Wareing relied on public votes, which used to be part of the finals before the "4th judge" system replaced it. That's why Wareing didn't change it.

Fun fact - Marcus recipe for this is almost identical to Gary Rhodes custard tart from his book new British classics released in 1999. And Gary got knocked out of the competition to Atul, now if Gary had of picked the right pudding could of been Gary cooking for the queen.

Wow 10 years ago how food culture changes, nowadays it be expected to have some ingredient no one’s heard of plus sorbet, purée and some high technical prepared fruit component.

What are you talking about? Sorbet, purée..??? These are things that have been a part of cooking for 50 years. Actually we are going backwards, chefs are going for a more casual and simple approach to food with as little ingredients as possible. Complex cuisine is kind of out of fashion now.

I thought the same, it just adds more dryness onto an already dry crumbly crumb base, its like making a jam tart then having a portion of honey or jam in a side-bowl - but what do we know, the judges obviously have many decades experience and ideally would lead the nation if they weren't so busy filling their over-active mouths

Well, let's not forget, they're served drinks with their food, so I don't think it's that big of a problem.
