I don't have a stone, do I still use same time and temperature pls, having a bake off on Saturday to compare mine with my brothers lol, sceptical about 2 nutmeg, I think I've only got loose nutmeg, how much of that and will it taste the same as fresh as I don't really want to go out unnecessarily, thanks for sharing fingers crossed for me x

Best way is to use the same temperature and time and then check it’s ready as he suggests as the stone will decrease the cooking time if anything. Btw, a pizza stone or even a ceramic tile would also work very well but it’s not necessary. I’m unsure about the quantity of nutmeg, I do like it on custard tarts but I have never seen so much used. Generally I will try all new recipes exactly as the recipe suggests and then make changes next time if it doesn’t suit my taste as otherwise you might never know how nice a recipe tastes if you don’t make it as prescribed the first time. Pre-ground nutmeg generally isn’t going to be as fresh and will have less flavour however, nutmeg is a very strong spice and generally you use very little whether it’s freshly ground or not. Lastly, my mum always taught me to never cook a recipe for the first time for important occasions, you are always best to have practiced beforehand. 😊

Made it today. It is super delicious! So silky smooth it's absolutely amazing! I used Aya Caliva(pastry chef mum) recipe for the pastry tho. Her pastry recipe is so good with this. And get this... no need to blind bake it! Definitely keeping this recipe and her sweet pastry recipe to make a super egg custard 👍

It's just a Bosch single electric fan oven. Fancy control panel though and the heat is very even!

LOOKS ABSOLUTELY WONDERFUL 3eggs + 3yokes + 2Tbs Sugar + 2C of Cream (Scalded) Slowly Mix then Seive. No Butter / No Vanilla / No Prebake Crust ??? . . . ok I'm going to try 325 degrees / Middle rack for ??? mins.

Can I ask, how do you prevent the pie crust from browning too much while cooking it with a filling inside? It looks beautiful after blind baking, but wouldn't another 30-40min in the oven with a filling inside make it too dark?
