I have converted a meat recipe to vegetarian by switching chicken breast for Quorn fillets and it was perfect. This can be made gluten free simply by making sure the stock you use is gluten free.

Nice one👍🏻maybe add some tomato purée, reduce the sauce for an extra few minutes might help to thicken it🤔.I love Mediterranean flavours! Thanks Sam😊
