Great idea I am sure if feels solid and you get a nice tactile feedback Maybe you can even increase the feel if you load the output with a low value resistor

There are detent-less modifications of an ALPS/Alpha contact encoder, which may be better to operate than the standard type, and are used in quite some digital music instruments, but it's not really a high endurance input. There is also optical encoder, you get a good enclosed one from Ali inexpensively. Indeed the same industrial surplus store that sold you the stepper will likely sell you an optical encoder gained from another printer, comprised of a sheet of transparent plastic with lines printed on it and two fine pitch LED gates, so it's not enclosed as opposed to the one off Ali. Third good opportunity is rotating shaft with a magnet and Hall effect rotary sensor, you may find open source project to sense stepper position that way, but of course you just skip the stepper. I wonder though. If you turn the shaft very slowly, will the stepper read? I think if slow enough, the current is not enough, but what would the threshold be? I wonder how repeatable it is with possible step loss. Maybe it's not a problem in real use because you can't turn the shaft slowly enough to cause a misread. I have a surplus stepper and rc4558, i can just try.

Not sure I understand correctly (I am Dutch) what you want. I only build it on exp circuit board and never made a pcb lay-out.
