Hello chef do we use both dry and wet marinate at the same time? And when grilling do you use the hook to hang the chicken in the oven or place it in the oven with a baking tin? Kindly help a first timer

Hi use either wet or dry only never both. You can use either the hook or place on the tray but it’s better if you can use the hook

The longer you leave it the slightly better it gets but you can also apply and cook immediately. Marinades are mostly on the surface and add flavour. The acid in lemon juice or vinegar will tenderise the meat

This is good, however, the amount of oil you put on will make the meet/ chicken to be extremely oily.
