As a Thai-Chinese... that Pomfret streamboat really hit my hungry meter hard.. That type of fish streamboat with taojiew ( fermented bean paste ) is very common among Thai-Chinese family who come from the southern China for 2 generation ago. That sauce really go well with fresh boiled fish so anyone come here might try looking for old style Thai-Chinese restaurant ( not the laxury one in hotel as those are mainstream Chinese dish like Dimsum )

The best dishes are often clean simple ones with fresh ingredients. Seeing this video makes me want to show it to my 85 year old father born in Canton China, he owned a restaurant for 18 years called Ling Ling Chinese Gourmet in Cocoa Beach FL. I love how the owner/Uncle was so proud and humble.

I love fermented beans. I usually make it with birds eye chilli and garlic, roasted tomatoes. Crush them all and add fermented beans, salt to taste. Tasty 😋
