Wonderful looking food there Mark i think i could enjoy every dish you had there, especially the first two 'curry' style dishes you tried, they just looked soo tasty... Huen jai yong is amazing! Was there last year. You should check out Charoen Suan Aek next time for northern Thai food. Been going there for the past 5 years. Not quite as serene and beautiful as huen jai yong but the food is even better in my opinion. It's a bit hard to find but it's much closer to town as well!
