Mark I have to say a big thank you to you, Ying and Micah. If it wasn't for you all travelling to different countries and showing us each countries traditions especially food then I would miss out on seeing the world. Even if I could travel it would be highly unlikely that the opportunity to go to the places you do like small local restaurants, people's homes and some of the smaller villages. You have taught me over and over again that food is what brings everyone together whether we speak the same language or not. We all have to eat and sharing a table with the people from the country you are visiting can be an incredible experience. The drone footage is this video gave us a great view of the area and I really appreciate you taking the time to film it and integrate it into the video. Your relaxed attitude makes your videos a delight to watch. You seem to instinctively know what your audience likes to see. Thank you so much. Xx

I'm an American white girl but I have GOT to say thank you for taking the time to show the TRUE SIDE of Mexican culture!! We see and here enough of bad that gets so focused upon. I live in Washington State, not Seattle areas .... the dry desert farming communities and we have a lot of mexican immigrants from all the different countries and if you get to truly know them ... they are AMAZING people. Warming, comforting, loving, family oriented and respectful souls!!! You show the values they have as well as their AMAZING foods!! Growing up here I had more Hispanic friends than anything!! Every Sunday is filled with music, the smell of grills and food ... laughing and kids playing. Love it, thank you for showing the TRUE PARTS OF MEXICO

So interesting! In Jamaica we use anatto in our cooking also and we do the same tomale but we call it 'tie-a-leaf'. So cool how the Taino Indians left their culture in our cooking. Our jerk style of cooking meat is influenced by them too. Authentic jerk is cooked on smoldering pimento logs and covered by more branches of the pimento tree.

Your work is really breaking out, and its a delight to watch. I loved the confidence you started this episode with, and your off-line research and leg work really showed. This was food at what I consider the pinnacle, and as many viewers have shared analogous experiences this is how you really immerse yourself in a culture and transform from the experience. I bet when you had completed the day, one of the things you walked away knowing in your heart is that the Mayan culture is not dead - it has simply evolved as has all the world. Mark, as a long time subscriber, it really has been magical to watch the transformation of your channel and of the breadth and depth of your excursions into different parts of the world for the sake of trying the best food. The first video of yours that I saw was the one where you were sitting on a 3-inch stool in a market in Saigon snacking on some Sup Cúa (Crab Soup) from a kind lady. I'm so excited you went to Yucatan! My parents are originally from there and I've grown up eating most of those dishes here in the states. Makes me glad to see how you enjoyed the food. They are right when they say the hoja santa is very traditional...the lady said the elders mainly eat it. My mom watching over my shoulder didn't know what it was! The pib style cooking is something my parents sorely miss while in the US. It's not often that can be done in the area where we live. Roast chicken is done in the pib too. The onions are something you see very often in yucatec cuisine. They are marinated in lime juice or the sour orange you had at first. The "cupcake" tamale you had I've not seen that small before. More often I've seen it made larger and sliced like a pizza. Also, they have a version in which they place a whole habanero or two in the center so it perfumes the whole thing and makes it spicy. You would've liked that! At least they gave you the pounded habanero. There is some in my kitchen now haha. Wow, so much to comment on. Thanks for visiting!

My house burned down except for my brick outdoor kitchen, I have been making homemade tamales, bread, mole , and cook over coals. We live in an RV on the property , but now all my cookware is cast iron. We have a whole new better tasting life. Your face changes when you eat this food. thank you for this!

Fun fact! Naranja or sour orange is the original orange used throughout Asia, Europe and the middle East. The sweet orange, which is what we call orange these days is a hybrid between sour oranges and Mandarin oranges that the Chinese developed. Sour orange is still used in Hispanic America for juice and marmalade.

jesus roberto perez Luisito no habla solo de la comida de otro paises sino también visita monumentos y lugares culturales de otros países. Este hombre solo se dedica a probar comidas. Son dos personalidades diferentes...cada uno tiene lo suyo. No critiquen tanto que no se imaginan el trabajo que representa viajar día y noche, y tratar de mantener la sonrisa en días que un esta muy cansado. Estas personas tienen que ser fuertes para adaptarse a comer otras comidas, aguantar la diferencias de horarios de un continente a otro...no es un trabajo sencillo como te lo presentan.

Older folks in Jamaica used the annatto for coloring. Not sure if people use it today. As a kid, my mother and grandmother used to use it. It has an amazing flavor. Love that culture. No pretentiousness about those people, we aught to embrace who we really are. Thank you Mark , love you and your family. God bless you.

I am kind of amazed at this, and proud that my Navajo culture shares cooking styles with the ancient Mayans! We also utilize the underground oven, for Kneel Down Bread and Navajo cake. The Kneel Down Bread is made of fresh ground corn wrapped inside of a corn husk and baked in the underground oven. Then the Navajo cake, is made with a dried ground corn flour consistency mixed with hot water, and a paste(corn flour mixture & human saliva). There is a layer of corn husks on the bottom of the oven and the corn mixture is poured in, while layering all sides and the top with corn husks. It is then covered with dirt and a built fire goes right on top of it. It cooks from dusk to dawn. They're both so good. The human saliva part is kind of unusual for an outsider, but normal if you're one of us.

Being Dine (navajo) myself, remember their were no borders back then when native tribes all traded with each other. That being why there are similarities between peoples today. My thanks to Mark for sharing his experiences of various cultures.

I am Mexican, have lived in Mérida and Campeche. Love Mayan food, maybe one of the best of Mexican dfood. Have never seen such an authentic Mayan food! Amazing. The redish sauce the Cochinita Pibil has is made with achiote. A mix of several spices. Delicious!

Ok let's stop for a sec and think about how we have being indoctrinated to just be able to appreciate the salty the savory the sweet tastes of our food the food we eat everyday, but then we go and try out spectacular new food with autochthonous roots true Mother Earth ingredients, when I think of the times I've had the chance to try traditional food, being young I could have triggered my own senses but I simply went for the city flavores.... I'll never miss a chance anymore I love how you made me realize that, I've been cooking for all my life and let me tell you mark, it's eye opening how awesome you got to taste everything and appreciate real food. Actually there is a connection, long ago a tribe of Ancient Mexicans That had a King were being chased and slaughtered by another tribe, I cannot remember the name, but anyway when they finally hit the pacific ocean side of Mexico they came upon a Coastal Village that had big fishing Outrigger canoe's, the King asked the people for help as the enemy would soon be there,.The whole village decided to go with the King, as they were in danger too, so they quickly packed up their belongings & Supplies, all got on the many boats and together they sailed off in the direction of what is known as the Tahitian Islands , it is said once they found the Tahitian Islands, they settled, made repairs, restocked supplies some stayed but a small group sailed off and landed in New Zealand and became the Maori's. It is also said that the Maoris would go back and forth and visit their kin in Tahiti. The Ocean was their high way ! AS they traveled the sea they learned of Islands that had fresh water, some islands they would drop off a few pigs and leave them, to provide food on the next trip and while they were traveling they would fish, so they had plenty to eat, all the Big ships had a Fire cooking pit on them made out of Mud, sand and Rocks, Pretty amazing !

It’s always good to watch Mark exploring new vistas n introduce us to a variety of foods across the globe. And when he tilts his head to his right n with eyes closed with a smile n the word oh!! escaping his mouth, means he has liked the food. Glad to see indigenous foodways being preserved! I hope they are demonstrating mayan agroforestry species and methods 👍🏻 Annatto (achiote) is a very common additive across the region down at least into Colombia (where im from). Many ppl these days sadly choose the crap MSG annatto alternative put out by Goya. You can buy those seeds, dried, easily to avoid the chemicals.
