Wow! Mark is finally in my home state. We have the best food here! For those struggling with the silence or lack of detailed explanations please understand us southerners do not measure and calculate when we cook. It is genuinely from the soul and most of us learn recipes by sight and taste only. That kitchen has a rhythm to it that no amount of explanation can capture. Thanks Mark!

Laura’s 2 hands down a winner. Good food, portions, atmosphere, etc. Displaced during storm best food from lake charles to New Orleans. Owner nicest person and family pride. I sent 4 people and they all go back.

Okra is a southern food, and if you are a true southerner you're apt to call it "okree". It's not found much north of Tennessee. Here in my area of northwestern Arkansas it is found only in the frozen veggies section or pickled in jars. In the deep south it is a common fresh vegetable in the produce area. Okra is a member of the Mallow family, closely related to cotton. The pods must be very young to be edible, otherwise they become woody. I just made myself hungry for pickled okra, and will add it to my shopping list now. Great show, as usual, my brother!

Mark, you brought back memories for me. I haven't been back to Lafayette and the original Laura's since 1981. Now that I'm back in Texas, I must take a trip to Louisiana. Thank you for your show.

Our family was raised on these, we had them quarterly, so good, so good, all the families in that part of the country. Tastes even better the next day, so many southern dishes or that way..🤗

Madonna is awesome! She remembers all of her customers names and greets you while you’re in the line. This is one of my favorite places to eat. They have the best rice dressing!

As an American who loves food and food TV, I sometimes get jaded or bored with seeing certain places highlighted because they are either run of the mill or I’ve seen them a million times. As a Black American Woman, this episode gave me all the feels!!! This reminds me of my mother, home, the warm hugs you get after Sunday service or the discipline you get at Sunday school. It hits right at my core where there are no measurements… you just stop shaking on the seasoning when you feel the ancestors pull at your arm. LOL. Such a great job, Mark and team. I’m vegetarian at the moment but I would slap somebody if that turkey Wang (because that right there is not simply a wHing 😂) was put in front of me… okaaaay!

I understand your feelings (memories) 🥰. Videos from ‘Mae Mae’s Happy Table’ do the very same thing for me, there were a few that had me near tears. Her accent and voice are so southern and soothing. She’s a treasure.

So true! The eye roll and the Oh wow are the key. The additional thing that tells you he loves the food is he doesn't reach for seasoning or sauce to flavor it with.

Lauras 2 looks truly amazing. Fabulous food made by the 'apostles' of Laura 1, now lovingly served up by Madonna. This is the dream - doing what you love, selling to an enthusiastic and appreciative customer, and passing along the crazy goodness of this cuisine.
