HA GIANG VIETNAM - Welcome to Ha Giang, in the mountains of northern Vietnam, on the border of China. Today we’re with Mr. Thien at his homestay where he and his family will be cooking a full Tay People festival meal - including a five colored sticky rice, a whole duck, a whole pig, and a fish.

When we arrived they were already beginning the meal preparations. We were lucky to see the entire cooking process from start to finish. One of the traditional foods of the Tay People is five colored sticky rice, each color made from a natural coloring and steamed. Along with the sticky rice we had a huge assortment of pork dishes, including fresh blood and organ sausage, boiled meat, grilled meat, and probably my favorite of the meal - roasted duck stuffed with Kumquat leaves.
When the food was ready, they presented it on trays over banana leaves with a chili dipping sauce. Food in Northern Vietnam is not only about eating, but it’s about socializing, talking, drinking, and eating together.

I love how everybody is involved in food preparation. These locals know how important it is to use almost all parts of the animal, and the meal goes deeper than just eating and drinking rice wine - they take time to really devour the meal, appreciating the deliciousness of the ingenuity of their labor, enjoying it and really having a great time together. Truly amazing!

Actually, the seasoning leaves they put in the bbq duck are not kumquat leaves, it's a traditional spice leaf called "mắc mật". The leaves and fruits of this plant have a characteristic aroma of essential oils and are not bitter like kumquat leaves ,you can only find it in the mountains of north Vietnam. From Vietnam with love!

I think in Thailand they also have that “mắc mật” leaf. They called “lamb mint” which means “bai-mui” leaf in their language

The sausage takes me back to my toddler years. I would run to my grandpa, who cooked a feast for his friends and point to all the dishes on the floor. He would fill a little bowl up for me and the first thing he puts are those fresh made blood sausage. Thanks Mark for reminding me of such a wonderful memory.🥹

I like this video most! Because, it's not only the food, you can explore about the culture too. They grill the duck with Clausena indica Daizell(mắc mật), that's not kumquat leaves! The countryside is so peaceful!

Wow what a feast and scenery. Used to grow up eating food prepared this way back home. Not everyday but occasionally on some event. This is fresh and healthy, every westerner need to experience this to know how bad the preservative food in their supermarket is.

cos there are lots of foreigners traveling to their hometown then they do have chances on meeting and communicating with the tourists by selling tours, riding tourists through the amazing loop, etc. This story is quite similar to Sapa

Ha Giang Loop is the most well-known tourist location for those who love to bike due to its spectacular mountain views. Gradually, the locals learn to speak English to provide services to travelers.

Five-color-rice is also very popular in Guangxi Province, China made by the Zhuang people. And the meal presentation is exactly like the Dai people of Yunnan, China

The Dai people in China and the Tay people in Vn are the same ethnic friend. Just different in pronunciation of Chinese and VNese.. just like Viet Nam is pronounced Yue Nan in Chinese. Tay people in Vn crossed the border and can communicate with Dai becoz they speak the same language.

This is STICKY RICE not normal rice fyi. Not only 5 colors but more or less as how many natural ingredients (to create colors) they can find. As this is the place where northern ethnic people live, they might have the same origin as some ethnic people in your country. Therefore, they share the same kind of food, that is super ordinary.

I really like the concept of "nothing is gonna go to waste" we are extremely wasteful here in Western Europe overall. Edit: Looks like I made some people uncomfortable with my view on this, but dear youtubers it's my view on things I like the idea of animal parts not going to waste. The Vietnamese went through a long war, and the country had a long period of poverty after that. All they have will be the best possible food, and that makes up the special culture of this country. As a Vietnamese, I am very proud of my country as well as the culinary culture as shown in the video.

Most dishes of VIETNAM are made from fresh food, and especially meat and fish, people will choose natural farming, not much industrial food, not frozen..and of course. There are many rich spices of Vietnam, as well as combined with the art of each locality, so it creates a dish with a taste, very unique, very special, not easy to find elsewhere. , thank you for sharing !

I wanna try their sea foods for which they are famous. I try their Pangasius fish fillets exported to so many countries. In this video I loved the natural colored five types of rice, although not sure of their tastes.

The hankshake after a cup of alcohol is so warm. There are 2 type of invitation in the alcohol party in the Nouth VietNam, The first invitation is general (all the people involve in the party will drink), The second is private between 2 people(someone want to make the communication or greeting with another people)

Dear Mark.. up in the mountainous area of North Vietnam you will find Thai people.. actually they are called black Thai and white Thai (according to the difference in the color of their clothes).. they are among 54 ethnics in Vietnam. They come from the same root as people of Thailand. I saw some hotel workers in Chiang Mai Thailand wearing the same costumes as Thai people in north Vietnam. And until now their language still has similar vocabulary with Thai language. Since you like Thai food so much I think You should go to their place and explore. Genetically speaking Vietnameae and Thai genes are the closest among all others.. research have confirmed that. Becoz they both belong to the Bai Yue a long long time ago. Look and read about Bai Yue to see what they are. Btw I guess the name if the ingredients they used are: 1. Fermented rice : mẻ 2. Kumquad leaves: I think they are Mác Mật leaves.. a very fragrant kind of leaves that mountain people used in their grill.. we lowland do not have. 3. The fragrant seed might be hạt dổi

This was an amazing video. The idea of using everything “nothing will go to waste “ is such a foreign concept to us here in North America. But Mark, where was Ying and Micah? I miss seeing them and all that Micah learns when he is with you. This video was great and I loved how it showed how the whole family works together. Men and women. I wish over here we were more open minded. Thanks again Mark keep up the great work because this series is going great 👍🏻
