I've seen a lot of seafood meals....I've seen a lot of Crab meals....this one tops them all. What a trio of fabulous dishes...the Noodles and head fixins top anything else I've seen!! Chef Dan is amazing and a nice man. Mark, as always....you are the best at what you do!

They're both awesome, but I prefer Sonny. Mark seems a bit lost or socially awkward at times. Not that I blame him, who wouldn't be in settings like that, with super exclusive food and people? Bless his heart. Its just harder to watch especially when its so relatable 😅 Like the times he's trying to hard to be a people pleaser, hard to explain... but like with the peppery crab in this video, I don't think he liked it as much as he said.🙈 He seemed nervous about saying anything at all as he went straight into overselling it as he was kinda trembling while handling it. But love to see all the amazing foods and cultures on both their channels.

@@JonHop1He didn't actually put that much ginger for that amount of crab, he put a bunch of julienned spring onions on top after the ginger. The ginger is also thinly sliced, not grated so they don't impart as much ginger flavour. The same rule with the pepper, whole spices don't impart as much flavour as the same amount in grounded form.

I can proudly say as an Australian who has traveled many places and had the pleasure of eating and experiencing some amazing cultures in my life. Although our meat & seafood produce is top tier unbeatable the cleanest the most vibrant in colour the freshest. Was in Mr Wong's yesterday as a traveller from Melbourne. Amazing place. The food is awesome. Service fantastic. But this vid doesnt do justice to just how beautiful the restaurant is, from outside, hidden in an alleyway to inside with jazz music and decor that just oozes taste and style. Fish Market is really iconic for fresh seafood hunters and Mr. Wong is famous for high level Chinese cuisine in Sydney. Mark brings these two together and makes extraordinary video. What a show!

Not only the King Crab is very rare but it was also cooked by Chef Hong that made it Ultra rare! What a privilege to have Chef Hong cook for you. I'm so jealous.

Tasmanian Giant Crab is what you see in the video. Those have been commercially fished since 1992, grow very slowly, and are about to extinct due to overfishing. Enjoy your meal.

My Dad use to occasionally buy a king crab in the late 80’s. Best crab he ever ate and at the time paid $10.00 per crab and they were huge.

This chef is amazing, he's so human and just seems like a wonderful guy. I get so tired of the high and mighty chefs we keep seeing all the time and seeing this guy take it back to the basics and get in there and do the work. Good for him and on to more joy! I get TONS of blue crab, shrimp, and all the gulf seafood here in the US, and it's always a lot of work for the blue crab to get the meat out. I can't even imagine just getting a CLAW with that much where you have to take many bites to get through it. Unreal!

@@AngelPerez-ln1uc I crab snare Dungeness crabs 🦀 up in the Bay Area California USA and I never eat the ‘butter’ it’s not just it’s fat it’s all it’s guts, all of the heavy metals, toxins and contaminants in the crab as well. As much as I love crab I clean them of the guts before cooking as I don’t need contaminants and toxins in my food. They measure the toxins in crabs here each season and some seasons it’s not even sage to eat. When you have a lot of crabs to cook you also it also makes room in the pot or stammer etc. But seriously the ‘butter’ is full of toxins

@@gregmonger5747 the restaurant is probably a play on sino-chinese literature. "Wong" can be the chinese counter part of "Hong", often from the southern regions of China. Since his restaurant is mostly southern chinese cuisine, the name is quite suitable and clever.

As an Aussie and Sydney resident, I would say that Incheon fish market is probably more impressive from the scale of it and the amount of live seafood available. Where seafood in Sydney and Australia generally comes to the fore is the quality from the very clean waters we have. We'd love to see you, T'Way are now flying direct for good prices, or you can pay a bit more on Qantas, Asiana or K-Air.

@MonstaAU No doubt that some Korean markets may be a step up in size and scope (haven't been to the Incheon one!) - but yes, from the look of it, this one has a strong level of quality/freshness. I could be getting swayed by Mr. Wiens on that 🙂

I see a wonderful variety of seafood prepred with so mny different seasonings and surely spicey I would imagine. Such an effort by chef Hong and explain all the plated dishes how they re seasoned and cooked. Thank youso much for such an education on these seafoods and the market was fabulous.

Mark, I really love this type of videos, specialty when are made by professionals like you and Chef Dan Hong on Mr Wonk Rest. Its so amazing that you have to bring gratitude to God for there creations and variety he create for our taste and smells and vision. Make me feel beyond happy. I feel Hungry now! @@sophiamonet7350 Spoken like a truly caring vegan. Me on the other have no problem eating dead animals. I do have a problem with the way the vast majority of meat products are processed and nasty crap is routinely added for additional flavour, preservation and increased profits.

oh my god! I had to nshow my mom the amount of we call cheese is in the crab! in my family, we fight over it! I would be in heaven. i like to take the head cheese, crush it up in butter and herbs. use it as a cracker spread. then top it with crabmeat. wonderful for a afternoon youtube binge day lol. but, I was a little broken til chef dan put the noodles in! My dream is to reach Australia. hope I make it to your restaurant

when I was a young bloke in the merchant navy the ship ran from Port kembla to Strahan TAS. We had an arrangement the the lobster fishos if they coaght any of these giant crabs to wave us down when we left Strahan and headed northd stop and we swapped beer for a couple of crabs (which incidently would cling to the lobster pots as the fihos were pulling them on board) I remember trying to get the crabs into the copper in the ships laundry to cook them. JAYSUS! It was 1967/68. The ship POOLTA was the last ship to leave or enter Strahan
