Martha Stewart is the #1 Chef in my book. Martha educates you while cooking!! I like Martha better than Gordan Ramsey. My opinion.

Not to take away from Martha but I also really enjoy Bruno Albouze. They are on par with each other for their attention to detail. He is a French chef but still his work is obtainable to try.

Simple and inexpensive are the very LAST words I would ever use to describe anything “Martha” does. And there’s a staff of hundreds that keep that “simple” world running. If you think SHE PERSONALLY still does every single thing she still claims to do on a daily basis I hate to break your heart but no way. No way in hell.

Dried Mint is the only form I have found that gives nice flavor, without the grassy taste you get from cooking/baking with fresh mint. It grows wild in certain places all along the southern shore of Lake Ontario. Best if you just take a few branches from each huge plant & let them continue to grow - & hang the whole branch to dry in a very warm, dry place for a few days. The flavor is intense then, & fantastic for baked or even fried chicken too, etc....; & pairs well with Basil, Oregano......

I have never heard of preserved lemon and learn from you I do global nature etc. Must be nice to travel and experience like that. Garden was a chore in my youth and wished I paid more attention toy grandma when canning and my grandfather on meats and all other. 😇

The way Martha sort of quietly and calmly rhapsodizes on the qualities of whatever she's cooking is very pleasant. I got confused about the passion fruit they used, though. The last time I had some, it was a magenta fruit with white flesh full of crunchy black seeds. This looked totally different. I guess there must be different varieties.

What's the best way to keep the various courses warm on Date night? Want to avoid cooking in front of him. Can we plate the Scallops and the pasta and pop it in the oven (keep warm) mode? And then pull out each course as the evening progresses? Will cooked scallops get rubbery in the oven?

If you want to make good scallops first brine them for 10 minutes in 4 cups water with 2 tablespoons of kosher salt. It will help rid the STP in wet scallops and season the inside of the scallop. Also baste the scallop in butter near the end of the cook. Martha's "recipe" is pretty basic.
