The actor who plays Biff said in an interview that it was Eric stoltz throwing the punch not Micheal J. Fox. He said it's easy to spot because his shoulders are more broader and his face is more rounded or defined. He went on to say that after Erik stoltz was fired and production was shut until they could get Micheal J. Fox he spent some time in the gym.
