Coconut sugar experience with this recipe: So I made it with coconut sugar - the only sugar I had at home, and it's amazing, however, not like condensed milk but more of a caramel flavour. The texture is less firm, more water-like, even though I had it reduced to less then half. Nevertheless tastes nice and I poured it in my coffee too. Thanks for sharing your amazing recipes!

Did this with almond milk and pure cane sugar I had on hand. It worked perfectly maybe a little less syrupy but still had the same end result and it only took about 25 minutes. This tastes amazing in Thai tea as I'm a big Thai tea fan but can never have it without the sweet condensed milk to compliment the flavor.

If you use 1/2 soy milk and 1/2 coconut milk, it turns out even better! A tip to know if it’s ready: put a plate in the freezer and pour a tiny drop of the condensed milk on the cold plate. Tilt the plate and if it drips slowly it means you’re done!

Mary's Test Kitchen You're very welcome Mary, I so enjoy your videos! They've all been so informative and witty. I look forward to trying to create many of the foods you teach us how to make, especially the cheeses! :) And thank you for providing the information regarding the sugar as well, I was unaware true Vegan white sugar even existed, I appreciate you letting me know! Thanks a bunch and keep up with all your awesomeness!

Wow. Just wow. You are so thoughtful and creative. Once again right on time as many of us out here (at least myself) was wondering how to come up with a caramel sauce that was vegan and here you have it! Now THIS would go great in my Vegan Caramel Frappuccinos! (ie banana with coffee syrup flavoring smoothies). I bet you are right that would be so tasty to dip pastries and buns into as well.

RheRheSmily I'm embarrassed to admit I completely forgot about this until you commented, so thank you for that. Having said that, I went out and bought full fat coconut milk and coconut sugar and cooked it just as the condensed milk. I'm still waiting for it to cool, so I'm not positive about the texture just yet, but the taste? DELICIOUS! Once it's cool, I plan to put that over some Ben and Jerry's non-dairy Chunky Monkey and go to town! Give it a try, it tastes delicious.

The thing with sweet condensed milk, vegan or not, is that you don't have an idea of how time-consuming it is to make and it requires a lot of patience. That's why making it at home kind of gives a whole other value, don't you think? Thank you so much for showing yet another vegan version of a cooking staple. =) Your videos are the best! Mary's Test Kitchen | Vegan Cooking I made this before watching this video but the soy flavour was super strong, do you know why? It tasted a lot better when I made it the first time vegan with rice milk, even though it was low fat, all I did was double the rice milk, I don't remember what the recipe was though. It also tastes great with a little coconut milk

I never thought of making vegan sweetened condensed milk, but this is a very simple recipe. I think that one of the first things that I'd use this for is a topping for a Vegan Filipino style cassava cake. The one my family used to make was topped with condensed milk and then put under the broiler to further caramelize it. Thanks for the inspiration. I'll let you know what happens when I make it =) Wishing you a happy and healthy new year 🎉🌟

That Carnation condensed soy milk seems to be available only in Australia. Bummer! I've used a similar method before, but I don't have the patience! I've also used cream of coconut (like Coco Lopez) as a good substitute for condensed milk, but I think it might have some additives in it. Thanks, Mary!

lamllemaussade Yes, I was surprised to find that it seemed to be only in Aus! I have used coconut cream as a sub for condensed milk before too (like in pumpkin pie) but I find that I don't always love the taste of coconut in certain foods. In this case, my need for a certain taste outweighed my natural laziness ;-) Thanks for your lovely comment, dear

The time seems a little off - I simmered mine below the boil-over temperature, so I didn't have to keep an eye on it and it still had lost more than half the liquid after only 10 minutes. A super easy way to keep an eye on the evaporated water is to weight the pot. Still, the vegan bounties were amazing, thanks for enabling my cravings again
@marystestkitchen
@marystestkitchen 6 жыл бұрын
Yeah, the timing will vary according to the equipment you're using, the diameter of the pot, etc. Eg: Wider pot = more surface area = faster cook time :-) I'm so happy you enjoyed the recipe. Thanks for sharing your experience!

So the coconut milk and white cane sugar turned out beautifully! It has a great taste and consistency. I made it to use in a vegan version of the traditional Puerto Rican holiday drink "coquito"! The almond milk, isn't as beautiful looking, and has a very distinct almond flavor (obviously) but it's tastes good and will probably be used for some kind of almond cookie.

I didn't have soymilk on hand, so I used fatty coconut milk to make this with 1cup of sugar, and it tastes amazing! I tried making iced coffee with it, but it really doesn't mix well with cold liquid, so you get lumpy stuff at the bottom of the mug...does that happen with this too and you just gotta stir it good enough? Should probably let the hot coffee dissolve it first.
@marystestkitchen
@marystestkitchen 9 жыл бұрын
Thanks for sharing, dear. The fat in the coconut probably is causing the issue; it won't mix well with the water in coffee, especially when cold. Mine dissolves fairly easily though I have to stir it a bit same as when I used to have the non-vegan version. I think your idea of dissolving it first would help but also using a blender could work too. Thanks very much for sharing your experience, dear :-)

I made this about two days ago and it's delicious! It tastes exactly like very sweet tapioca pudding to me. It's wonderful in my tea. I stored it in the fridge, and it took on a taffy-like, stretchy consistency, so I popped it in the microwave and it went back to normal. After about two days, it was no longer smooth, and there were sugar crystals in it. It still tastes delicious, but I was wondering if there's a way to prevent this. Maybe I overcooked it? Thanks

Mary's Test Kitchen // Vegan Cooking I can let you know how it turns out want to make one for my birthday in March 😊.

Hi Mary! This is a really helpful recipe, even for a (plant-based) omnivore like me. Condensed milk (that's available to me) is loaded with palm oil which I'm trying to avoid. One question though, since Silk soy milk has other ingredients aside from water, soybeans and sugar, will I get the same consistency as plain old-fashion soy milk? Thanks!
@marystestkitchen
@marystestkitchen 9 жыл бұрын
+rosecolouredglasses it won't be exactly the same but close enough! I hope that helps, dear.

Your channel of you making bread came up in my news feed. I'm so glad I clicked it to watch. So of course I clicked this video. I love condensed milk. I put it on my fruit and in my hot cereal to substitute for sugar. I am going to give this recipe a try. Also, the same health challenges that you mentioned in your bread making video, I'm experiencing as well in my body. Going vegan have not been on top of my list however I am interested in changing some of my choices to vegan ones. Now I can with your helpful and simply vegan recipes. Thank you so much for sharing. 🫂❤️🙏🏼

Hi I'm so glad you found my channel! I'm not sure which videos you watched yet but I made this recipe years ago when I wasn't having any noticeable health issues. In recent years, I discovered that my chronic pain is triggered by consuming sugar and other dense forms of carbohydrates. While this vegan condensed milk is delicious and fine for healthy people, if you suffer from chronic inflammation and pain like I did, you might reconsider. These days, I would never make this for myself.

Can this work with any non dairy milk? It looks wonderful!
@marystestkitchen

qochemist I have only tried this with soy milk, but I have heard of people using almond and coconut milk. I would recommend using creamy milks such as those or cashew milk for their high protein/fat content which will result in the thick texture we're going for here. Happy experimenting, dear.

So I attempted to make this and it worked out great, but only for immediate use. I put it in a mason jar and then the fridge after cooling down, but everything crystallized. Am I doing it wrong? How can I stop it from crystallizing? Your long time fan from IG, Jiuzeppe :)

I'm not sure. This hasn't happened to me BUT I have read about it. Apparently all it takes is one little undissolved sugar crystal to start a chain reaction that makes the whole thing crystallize. Some say adding corn syrup prevents this. I don't know if this would be a solution though. Let me know if you decide to experiment with it. Good luck!

Seeing as how typical white sugar is not technically Vegan (it is filtered through "bone char" made of course from Animal bones), I would be inclined to try this with my favorite cruelty-free coconut sugar. All in all, it sounds good and is a very informative video as always Mary, thanks for sharing!
