For S.E Asia or Singaporean / Malaysian curry , you will need to add in the spice paste which is a blend of red onions / shallots, ginger, galangal, garlic, red chilli and candlenuts or you can substitute candle nuts with cashew nuts . You will then need to stir fry this spice paste a bit with some oil, some cumin seeds, coriander seeds, fennel seeds, a few curry leaves, 2 to 3 star anise, some cloves and 1 cinnamon stick for a minute or 2 . Next add in the curry powder and the white portion of lemon grass and stir fry a bit more till the spice paste thickens or darkens. I guess doing the spice paste gives the curry a bit more depth / complexity. Then add in the chicken and coat it with the spice paste. Add in the other sliced onions , potatoes, balachan (shrimp paste) or fish sauce if you do not have access to balachan, chicken stock and coconut milk / coconut cream. So, the Singapore/ Malaysian version of coconut curry is more complicated . I would say that Masa-san's version is much simple and easy to cook.

i think you cannot cook tofu for so long. I am guessing you can just put more vegetables like zuccini etc... and then shorten your cooking time. You might wanna use the hard tofu kind and add it later... probably cannot cook it more than 10 min
