Masaaledaar Raan | Raan Roast Recipe | Easy Raan Steam recipe
Marinate: recipe is for 2 kg Raan
1 Leg piece (Goat/sheep)
3 green chillies
Ginger Garlic Paste 1 tbsp each
Papaya paste 2 tbsp full
Yogurt ½cup
Oil ⅓ cup
Roasted Gram Flour 2 tbsp
Dessicated coconut 1 tbsp
Salt to taste (1.5 tbsp)
Tumeric powder ½ tsp
Red chilli flakes 1 tsp
Red chilli powder 1 tsp
Roasted crushed cumin & coriander 1 tsp
Vinegar ⅓ cup
Blend everything and marinate the mixture
Add Orange/yellow/zarda food colour (optional)
Leave it at room temperature for 1 hour at least. (Over night is best)
Steaming Process:
Foil paper then butter paper
Then: one garlic , bay leave, green cardamom, star anise
then the meat with all marinade.

Steam on high flame for 10 minutes.
Medium low flame for 2.5-3 hours
Cook the rest of the marinade with some oil
Add freshly chopped coriander for flavor.
Use this masala for stir frying the Steamed Leg and for serving purpose too
Grill some vegetables of your choice to serve with
special chutney
