Masala Bharay Baingan
Ingredients:
- 1 bulb of Garlic
- 3 Green Chillies
- Salt as per taste
- 1 tbsp Chilli flakes
- 2 tbsp Dry Coriander
- 750 gms Eggplants (brinjal)
- 1 cups Oil
- 2 Onions
- 3 Tomatoes
- 2 potatoes
- Fresh Coriander
- 1 tsp Cumin seed (zeera)
- 2 tbsp Yogurt
- Boiled Rice or Chapati for serving
Directions:
1. Prepare the Spice Mixture:
- Grind the garlic, dry coriander, chilli flakes, salt and green chillies in mortar and pestle until a paste forms.
2. Prepares the eggplants by first make cuts as shown in the video and then stuff the cuts with the prepared spice mixture.
- Stuff the bulbs of green onion with the same mixture.
3. Heat one cup of oil in a pan and fry Eggplants in the preheated oil for 3 - 5 minutes each on medium flame until they change colour and become soft.
4. Add onion, tomatoes into the grinder.
- Grind the mixture into a paste.
5. After frying the eggplants, add half a cup of more oil to the remaining oil and add the onion tomato paste and add leftover masla mixture cook until oil separates.
6. Once the paste is cooked add cumin.Cook for a minute.
- Add potatoes and mix well.
- Now, add 2tbsp of yoghurt.
- Cover and cook until potatoes are tender.
7. Add fried Eggplants, the green part of the Spring onions and sauté lightly.
8. Add little water if required to adjust the consistency of gravy as desired.
9. Cover and cook for 4 to 5 minutes at low flame.
10. Garnish with green fresh coriander and green chillies. Serve with boiled rice or chapati.
