I own a 270mm KS Gyuto, it’s like a piece of artwork. What a treat it would be visiting a shop like this. They don’t exist where I live.

best set of knives i have. you can have your name engraved either in kanji or english on your knives. His knives have a lifetime guarantee i think. I remember having a chat with the old guy and he said most of his customers come back to have their knives sharpened, or the handle replaced, but nobody buys new knives... hahaha

@@dharamrajchauvan8703 see the old guy in the video, I purchased it from him. He engraved my name on both my knives in Kanji and sold me a sharpening stone too. He gave me tips on how to keep my knives sharp.

When i was stationed in Okinawa (1987-1990) we would go to the shopping district area and see these shops and glance into a few and keep it pushing not knowing the incredible deals we were passing up in cutlery as myself and most of my service members only knew German and American made brands.... not having any idea about grades of steel and how Japanese cooking requires many different styles of blade for various specific tasks missed an opportunity to land some kitchen keepsakes

@@pengasus in the late 80s I'm sure Almost Nobody Knew how good Japanese Steel was other than Professional Chef's on the East & West Coasts of USA....not saying German Steel was bad but the Slue of Craftsmanship Available then was Bigger then than Now.....and Prices probably not as high due to only local demand for merchandise unlike today with KZbin letting Millions see what is available
